Breakfast: Steele cut oats, with sliced almonds, dried cranberries, milk and brown sugar. Lunch: small bean and cheese burrito (from home) trying to decide between leftover morrocan sweet potato stew and a green salad. Dinner: I'm attempting falafels. We will see how that goes.

I am not good at meal planning usually. But since I went veg last month I make a big batch of either quinoa or mujaddara (lentils and brown rice dish), rice, and bake a few potatoes for the week. I also prep my dry salad toppings (bell peppers, carrrots, cucumber). I work our meals around those staples.

Mukimo with black beans is my favorite. Mukimo is basically mashed potatoes with spinach and corn mixed in. My boss used to make it and I became immediately addicted.

The korma was delicious though, I added green and red bell peppers, spinach, peas, zucchini, and sweet potato to a Jared sauce from Trader Joe's . Sooo tasty!

Verdict on the seitan: It was fine, good not great. I will probably try a different recipe next time. I'm also fresh off of meat, so that might be a factor in my judgement. I will try it again, with different spices.

I actually attempted seitan for the first time today. It looks right, but I haven't tasted it yet. Just simmered it in veggie broth and tossed it in the fridge for tomorrow. It's absolutely not a waste of time. A lot of people lose weight walking. As your endurance improves you can increase speed and duration. Maybe you'll even become a runner someday. But going too fast too soon can result in injury, listen to your body.

Cook at home, and when you do, don't salt anything until you get to the table. You use less salt this way, because it is closer contact with your taste buds.
