    Pork tenderloin, baby back ribs, spare ribs, thick cut pork chops, fresh (uncured) ham. Is that what you meant? Those are my favorites when it comes to pork.

    meh- I prefer bacon to almost all of those. Pork chops never come out tasty- I do like a good slice of a nice ham- but I mean- I'd still prefer bacon.

    I don't know, I had some nice thick chops stuffed with goat cheese, venison sausage, and fresh herbs. It was amazing...

    I'd eat! I don't know if I have favorites among the various pork options, but I actually eat pork chops far more often than bacon, and can't complain.

    Oh I did look up a coffee sauce recipe either the reason for the coffee being added must be for some flavoring or color. Let us know how it tastes

    That Fermin stuff is pretty good. I used to buy some of that from Savenor's in Boston. Pricy, but good. My goal is to bring my prosciutto up to 80% of their quality. I already have a farmer willing to work with me on it. 2oz is a significant amount of the pata negra, last time I bought that stuff it was $140 a pound.

    Sounds good, I just put the the roast in the oven, The carnivore club is out of Toronto Canada but I think they do ship to the states, Its $50 CAD a month. so like $40 USD. They do themes every month from really good shops around the world.

    I run a small carnivore club, this month's project is General Tsao's Bacon, and a bacon jam. We then get together, eat what I made, and drink bourbon.

    Mine does. He's a genius at it. So I'll keep him. Even if he doesn't know how to make bacon.

    I hate dishes. I really enjoyed when I was a chef that I had staff that would do my dishes for me as I created them.

    I need to become rich so I can have that again.

    Thanks to the peeps on here that joined the Carnivore club and used me as a referral... I get a free box for every 3 referrals. Was not my intent but cool non the less.
