Yeah I slept really well. At our age, that is such a gift and changes my day completely. I am always grateful for sleep. Did some snacking after 7 last night which was very odd. I haven't done that since before December. It must have been because I was so tired and crabby, need to work on that. Those are not excuses to put unhealthy things in the temple lol!

Joyce and everyone else who wondered: Yes, Olivia is improving on her mother's breastmilk. Katie is pumping an amazing 6 oz every 4 hours. Whoa!!!! Pretty amazing. They have a freezer right there in the NICU with labeled breastmilk. She even pumped and froze the colostrum so Olivia will get everything she was supposed to get eventually. We are also pretty psyched to see the pacifier in her mouth because that means she is learning to suck. Oh, everything is working out so well for a little girl that was so sick. I don't remember what I told all of you, but Olivia had both respiratory and cardiac arrest, hypovolemia and hypoxia, liver & renal failure, DIC, and gut ischemia. An almost impossible hurdle to overcome. And just look at her now, 2 weeks later! Woooo-hoooooooo!!!
Love you gals, this has been a safe outlet for me to worry and fret this last 2 weeks. Soon I will be back to paying more attention to all of you and less self-absorbed.

Here's the low carb muffin recipe. Sorry it's so long but thought it might be helpful to show you how I "tweak" it. I generally have one per day - 1/2 in the morning, 1/2 later in the day when I'm hungry.
LOW CARB FLAXSEED/ALMOND MEAL MUFFIN
Basic Recipe:
• 3 tablespoons low carb flours such as almond, ground flaxseed meal (see below).
• ½ tsp oil (butter, coconut oil, nut butter, etc. can use less or leave out.)
• ½ tsp aluminum free baking powder (I can use less)
• ½ tsp cinnamon, if desired (can use more or less)
• ½ tsp sugar, stevia, honey, maple syrup or other sweetener. (can leave out.)
• 1 egg
• 1 tsp water, milk or other liquid if needed-if using a smaller egg you might need more.
Stir together in a small bowl - I incorporate the fat with the dry ingredients first with a fork like making pie crust then add the sweetener and egg. Then I add a little milk or water if needed to make it like a pancake batter and stir that together well with small spatula.
This little muffin can be made in a large coffee mug. I prefer to mix it up in a mug or small bowl and pour the batter into a small greased 1 ½ c. Pyrex baking dish, so it will end up about 4 to 5 inches in diameter and 1 inch high.
Cook in microwave approx. 1 minute on high, just enough to make sure the top of the muffin isn’t tacky. I immediately turn it out on a little cooling rack for few minutes. Store in a plastic bag, refrigerate.
Low carb baking mix:
• 2 parts almond meal
• 2 parts ground flax seed meal
• 1 part coconut flour
• 1 part flaked coconut
I usually make up a few cups of the mix at a time. I’ve seen recipes using ½ almond meal, ½ ground flax seed meal or just all flaxseed meal.
If you are using coconut flour, use less than 1/3 of it in the recipe otherwise it will make the muffin pretty dense and heavy (unless you like it like that!) Experiment.
Estimated MFP Recipe Builder nutrition value for 1 muffin: 204 calories, 14 gm fat, 11 gm carbs, 6 gm fiber, 3 gm sugar, 11 gm protein
Of course, you can leave out the added butter/oil and the sweetener to cut the fat and carbs back a bit. Enjoy!

Comment on the Low Carb muffin:
The estimated nutrition value will vary according to how big your tablespoons are (I use a tablespoon serving spoon, not measuring spoon) and other factors of course. Even if I've been extra generous with the mix, I take comfort that I'm no longer eating these snacks below.
----Little Debbie Cinnamon Streusel Cake – 1 cake: 180 calories, 7 gm fat, 26 gm carbs, 0 fiber, 15 gm sugar, 2 gm protein (I could eat 2 or 3 of these in one sitting)
----Snack size Reeses Peanut Butter Cups (1 serving = 3 small cups – 27 gm): 240 calories, 14 gm fat, 27 gm carbs, 2 gm fiber, 24 gm sugars, 5 gm protein (hey, these are small.... 1 or 2 more won't hurt.)
I'm cutting back on sugar and carbs, not fat. Plus eating real food, not preservatives and ingredients I can't pronounce. I've never been tempted to binge on this low carb muffin. Not once.
A few weeks ago I left out the sweetener and cinnamon and instead added a big tablespoon of shredded parm/romano/asiago cheese. Made a really yummy savory one for a change.

Have been using my Instant Pot a lot. I made cabbage soup in 15 minutes - of course that doesn't count prep time but it is really tasty and only about 50 cal per cup. The pressure cooker seems to intensify flavour and both my boys are raving about the tenderness and taste. Does anyone know how to convert standard recipes into use for electric pressure cookers? I have a few recipes I'd like to re-purpose to cook in the pressure cooker.

Lanette- thanks for the muffin in the cup recipe! I have a similar one and it is fantastic to make an Egg McMuffin with! I like your addition of the sweetener and cinnamon. I will try that. I love cinnamon toast!

Started 6 week class on adult education and diversity. My 5 th class in my attempt at a 3rd masters, this one in adult education. At least it is all online.

We went out to lunch in Winchester today to Rick Stein's. Do you have him on your TV? Celebrity chef who does a lot of programmes where he travels about. We had the cheaper, two course set menu and a glass of wine. 400 cals plus wine 140. Not too bad. I like the restaurant because it is very tasteful and civilised. Nice colours and proper linen tablecloths and napkins. Good waiters. Nearly everyone in there was our age! It felt like the over 60s club, but it's very popular. Last year we had a poor experience there on our anniversary and I reviewed it on Trip Advisor. They contacted me and we got a free lunch!
Then DH went to his new NHS dentist. They are going to do the actual filling next week. About a quarter of the price of our rip off dentist. Result! We might turn it into another outing together as I thoroughly enjoyed today. It's so nice to have a "date lunch" and a trip. We also walked for a while by the river, which was lovely.
Going to have something easy for dinner. Scrambled eggs ????

I love this way of eating! Prepping for a re-feed at the end of the three weeks. Researching information on doing this properly. Plan on staying with this eating style for a few months. A re-feed is supposed to help with building/not losing muscle depending on if you are eating at a deficit or not.

Hello all!
Sure enough, I put on four pounds with last week's cold. Too much orange juice and not enough exercise. I expect it'll disappear soon enough, but I sure hate to see that weekly number go up instead of down! On the other hand, last week's loss was bigger than anticipated too, so I may have just hit the extremes of a little fluctuation.

Karen - What a beautiful photo of mom and baby! So glad Olivia is well enough to get that "skin time." She is definitely looking stronger.
Ginger - I had my optician make me a pair of glass with the lower part of my bifocal prescription only. So I have a pair dedicated solely to reading, mostly in bed.
Joyce - So sorry your sister has had MRSA. My mom got it in the hospital when they put in her chemo port, and it was a factor every time she needed a procedure for the rest of her life. Once it's there, it's the devil to get rid of.
Sue - Thanks for the funny story about your Arabian! She must be getting bored!
Sarah - Thanks. I'm not close with the uncle, and I'm at peace with him being "who he is." But I feel for my cousins, and it pains me that it's so hard for my dad. He just moved into a senior community last year, then lost his lady friend. Wish I could hold back the bad news for awhile, but he's gotten to the age where there's just a lot of loss to deal with.
sharontank - Welcome! Sounds like you're on the right track... I always remind myself that things are probably going to hurt whether I sit in my chair or get up and move, so I may as well get up and move.
Tere - I guarantee you can be a sexy grandma with white dreadlocks. I have a friend about my age who wears hers in short dreads and it is absolutely stunning.

Well, Dad is off to New Orleans this morning. My sister was able to take time off and drive him. He's been having a hard time getting consistent answers from Uncle R's sons... I don't know if one boy is more optimistic than the other, or if things are changing fast, or what. Anyhow, the latest answer is the Uncle is being transferred to hospice, and it doesn't sound like it'll be long. I'm really glad Dad decided to go.

Popping in to say that I finally made one of those cauliflower pizza crusts! It was fantastic! I made it according to the recipe on my niece's facebook post. I don't have a food processor so I hand grated a head of fresh uncooked cauliflower, drained the water/juice from it (I formed it into balls and really squeezed that water out!), added 3 eggs, 1/2 cup of parmesan, 1/2 cup of mozzarella, garlic, salt, pepper, basil (season to taste). Spread this mixture out onto parchment paper to form a crust about 1/5-1/4" thick. The thinner, the crispier. Bake at 425F for 15 minutes, pull out and top with whatever toppings you choose and bake for another 10 minutes. SO....YUMMY!! That's all I have right now. Karen- Such wonderful news about baby Olivia !! Mary- Forgot to mention how big the twins have gotten! Such sweet little girls!
Memorial for my sister is this weekend. Once we get past that; we are on "baby watch"! Our little pi-boy is due in three weeks!! For you new girls, this is our first grandchild. Kelly Thanks, the girls are doing great with such a rough start! Thoughts and prayers are with you and your family. I watched a video on how to make the cauliflower pizza crust and they suggest to place the cauliflower in a nonstick pan on a low to medium setting and cook the moisture out of it.

Did 30 min on treadmill at 3.5mph. I went a little slower trying to figure out this treadmill. The plan for tomorrow is to take the HIIT class (hopefully, it’ll be something different from the other day) then a Power Core class (which I figure is probably only about 15minutes, then if I have time a yoga class.
After exercising went to Publix, want to try their grapefruit, then bought gas, then a frame for the picture I painted. Went into the Y and it was cloudy, came out an it was POURING. I got so soaked that I needed to dry off my body, change from shorts to pants and dry my shirt.

I brought cookies down here with me but I’m thinking that I may just keep them in a tin we have, mainly so that they are out of sight. The brownies I brought are in foil so I don’t see them every time I walk past the food pantry.

KJ –isn’t cauliflower crust delish? I always seem to need to extract more water. I do use cheesecloth (or something like that). How did you get yours out?

EEEEK! Two people were laid off from my team, today... I just inherited a bunch of work...
The good news is, I wasn't laid off. The bad news is - I have a LOT less time for hanging out with you guys...
Oh - and I, also, have a new low today - didn't get the 207 I was hoping for - but, I will take 208. I haven't weighed this little since I was a sophomore in college - and that's been a minute, y'all.
I will be reading, when I can - and I will check in as often as possible.

Re Oh no - glad you weren't let go but now more work for you Congrats on your new low.
Just wondering if anyone has had this experience. My right thumb has been numb for about 2 months now, just from the tip down to the first crease. I read that it could be related to carpal tunnel. I am wearing a wrist brace as apparently it can be from a nerve problem. Any suggestions for natural treatment? Thank you.
