My lunch today was 1000 grams (that's over 2 pounds) and less than 500 cals -- broccoli, corn, peppers, red onion, black beans and penne pasta all tossed in 2tbs Skinny Girl Dijon. Filling and delicious!
Oh - and I finally tried the Shiratke noodles. Tasted just like 0 cals8 -
I am loving the zoodles- now i can buy them prepackaged in my grocery store- and use in the place of spaghetti or pasta which I love- I had a BIG plate of spaghetti with meat sauce for lot less calories4

Zoodles are also nice for breakfast with a runny egg over them, siracha sauce and a half Ezikiel English muffin, or in a pinch, for lunch, I'll toss a lean cuisine over the top.5 -

Come on dont buy them. Buy a spiralizer and use that. It will pay for itself in no time and you can zoodle prep for the whole week. You will be shocked how much you get form a single zucchini haha
Right? And the prepackaged ones are soooo expensive relative to how you're actually getting.4 -
I laughed at the $8 tub of zoodles in whole foods. Insane. There's a couple of counter top devices you can get on Amazon and also there are smaller handheld ones. There's a Veggie Bullet out right now that I'd be all over if I prepped food for more than just me and my husband, especially as he can't eat a ton of veg.3

I had two back to back migraines that were just AWFUL and my stomach is still feeling very delicate right now.
Bland, easy to digest food is doing it for me at the moment. I can't bring myself to eat anything but boiled potatoes and cottage cheese. When that's all you're eating, that's a LOT of potatoes. I've been eating 1300 grams of potatoes a day plus about 350 grams of apples and 400 or so grams of cottage cheese. Stuffed.0 -

The fettucine is fine. I had it with a strong cheese and it was great and I've also done a cheesy sauce with just laughing cow.0 -
If you're looking for a light summer side dish, I made this yesterday and it was delicious (and simple). No recipe, I just winged it. 3 ingredients - diced watermelon, diced red onion and jalapeño. I had it with fresh grilled Mahi.6

Here's the fettuccine shirataki. Someone can do the calorie math on this...probably 4 oz shrimp, 150g zucchini, 4 wedges laughing cow, 85g mushroom, half tablespoon olive oil (usually don't use it) and two bags of shirataki. Like...350 cals maybe. Super cheesy. Normally I'd use more veg but I'm considering slipping on a little black dress tonight and already have vacation bloat going on. I use lots of salt and garlic powder.

Now that the weather is hot I'm back into eating salads.
Other than that I have to figure out how I want to eat these noodles, they remind me of ramen0 -
Sorry no picture but:
200g Tofu (not normally a fan of it over Quorn but thought why not after having it a lot in Asia)
200g Baby Potatoes diced
Half a Pepper
Half an Onion
75g Sweetcorn
Chillies
Cook and season together, add a splash of Soy Sauce and I added a good chunk of chilli sauce. Huge amount and absolutely gorgeous.
Mixed it with some rice, still have just over half in the fridge.3 -
Yesterday morning I threw some boneless chicken breast in the crock pot with a can of fire roasted tomatoes and a heaping spoon of chipotle in adobo. When I got home I sauteed a bunch of veggies that I had on hand (a large summer squash, half a red onion, half a package of mushrooms and the corn from a left over ear we had grilled), seasoned with cumin, smoked paprika and garlic powder. Topped that off with an ounce of shredded cheddar cheese, some homemade pickled red onion and pickled jalapenos, half an avocado and some hot sauce. Yesterday I ate it taco style in corn tortillas, but today I just had the leftovers in a bowl for lunch. So much food and so delish.6

I am doing volume and 1200-1300 cal .
I am incorporating loads of fiber,low cal proteins like chicken and fish plus loads of vegetables and soups . . so far down 19 lbs in 61 days . and I am not hungry
in 20 years the only other time I was successful was when I did volumetrics back about 16 years ago (there are a couple books they basically remind you the more fiber and water in the food the more you get to eat for the same amount of calories )
the best thing is I love vegetables and now that I am learning to enjoy with out tablespoons of butter ! leaving me more free calories for satisfying snacks or a glass of wine before bed .
the one thing I really miss is a dense crunchy cracker so I am in search of a cracker recipe that is high fiber and low cal to enjoy cheese or hummus on
I really regret that I did not start sooner

My high volume lunch: Pulled pork BBQ, baked sweet potato and onion, Swiss chard, spiralized zucchini, and Hungarian wax peppers (all from my garden) sauteed in olive oil and Balsamic vinegar. 439 calories, super filling and cost less than $2.

Didn't make the best choices today, but certainly met the criteria of volume. I got really hungry during a meeting at work and decide to leave and go to the grocery store. For something "healthy". Bad move. I do like that it's a nice round number though.8 -

My volume eating is taking a hit; we welcomed baby #4 almost 4 weeks ago and I have not had time to make myself salads, omelettes, stir frys, or soups lately (all my volume standbys)). Just seriously, no time at all. Any suuuuper fast ideas?! I'm living on bowls of yogurt. All your foods look great, everyone!3 -
All of these look so good anday so satisfying. I have been trying to eat more smaller meals to "shrink" my stomach. Is that a myth?1

It's mythical for sure. Meal size is all about preference - some people prefer small and often as it keeps their energy levels more even, but it's not doing anything permanent to your stomach.2
