Thank you! No wonder I was coming up empty using peanut butter and vegan in my searches.
My SIL does an Eclair Cake which is very similar and it is soooo good. But I like this one; it seems easy and looks a little different.1 -

I made buttermilk cornbread sticks yesterday for New Years. Fortunately I gave some to each of a few neighbors and took some to the tavern to give out because otherwise I would have eaten them all. Usually.... almost always.... I prefer savory to sweet. Cakes and cookies aren't nearly as tempting as a vindaloo. But for some reason today I could totally dig into a tray (not a piece, a tray) of baklava. Or some really good macarons. Not macaroons. Macarons.
Actually I could totally go for a huge plate of halva. That's vegan, and it's delicious.2 -
