Evening Ladies
I'm home...long day at work and then up to a friends for dinner,she made brownies for dessert and had lovely bread to have with dinner..but I am soldiering on..3 weeks and I'm still trucking along..
Today is the first anniversary of my dads death ..so I'm reflecting on all the wonderful memories I have..10 -

To answer the questions about why I’m not allowed to cook in the RV, my DH is of the mind that cooking inside will infuse the walls, chairs, etc. with grease and the smell of the food. Another of his quirks! Lol

Held my plank then took the extremepump class. The plan for tomorrow is to walk backwards on the treadmill. Then I’m supposed to volunteer at the Green Room, then go to the local community college’s cosmetology school for a chin wax. I think I’m going to try to change it to the 31st, when it’ll be closer to when we leave
It’s pretty cold here in NC, I actually have my heavy exercise pants on and I’ll probably wear them to bowling. No ceramics tonight since they’re closed for MLK day. Fortunately, no ice here.
Allie – my aunt in PA was buried in January. You know how hard the ground is up there (Scranton area). What they do is they have a service, then they keep the bodies until the ground unfreezes and bury them then.
Barbara – the chocolate bran muffin recipe is pretty easy. Take 3 cups of oat bran (I usually use Bob Red Mill – you can download a coupon for it on their website), 1-1/2 cups of water, 1 egg and a box of low fat brownie mix (I’ve only found Betty Crocker to sell this). Then put in muffin tins (be sure to use spray. One time I lined the muffin tin with papers and because it’s low in fat they stuck to the paper) and bake at 350 for 30 min. The advantage for me is that I usually will have at least 24oz of water with this. Regular size muffin tins, not mini-muffins.

Just had a power outage of 4-1/2 hrs. It’s interesting because there’s nothing you can do. I couldn’t even crochet.

Past my bedtime but wanted to catch up reading
Barbara- thank you for noticing my post regarding my 19 days off sugar. I was beginning to think I was invisible. Today I hosted bridge and had a mixture of popcorn, chocolate and pretzels for the girls to snack on while playing. I was able to resist the mixture completely. It is strange but even celery tastes sweet to me now. I had a loss of .8 this week. Very slow but I am still just working on sugar and more walking.
Enjoying the Skinny on Fat series but it takes a lot of time as I am also watching Live Longer, Feel Better.
Better get to bed.
We had 45 mph winds that also blew everything around on my patio. Glad they have settled down.

Had to let some friends know I can't join them for lunch today as I have carers coming to assess my dad. The district nurse said she would call with a time for her visit today (I was going to ask if it could be late afternoon so I could see my friends) but now the carers have called and they asked if 1pm would be okay. Decided it would be best to cancel my plans.
The carers want to assess my dad to see what help my mum needs, I think she is struggling a bit, she hasn't been feeling too well herself and my dad has been getting impatient with her when she can't hear what he is saying. He's also been stubborn about taking his tablets. We'll need to ask the GP whether at this stage he needs to take all of his tablets. There's a few things we'd like to discuss with the district nurse.
The weather hasn't been too bad for the time of year, we've had a bit of ground frost, but no snow (yet). It has been very cold, although I'm sure those of you who are minus temperatures wouldn't see this as cold - but it feels cold to me.
I saw the eclipse yesterday morning when DD and I walked Leah, it was right in front of us as we left the house. DD was going to go back and find her camera to take a photo, but Leah was impatient to get walking. By the time we got home it was almost over. DD took a photo but there was only a little black smudge at the corner.

Morning ladies~
I am up and had my tea, getting a bit a frustrated with weight loss but not giving up im hovering between 8-10 lb lost and am trying to get this Keto stuff down,no sugar just stevia in my tea.. heavy cream in my tea... very yummy
it took years to put the weight on, I will keep on trucking

Allie .. 8-10 pounds is a lot in the past 3 weeks! It would be nice if it kept coming off at that rate, but you know it's never sustainable when it does. You're doing great! Hang in there!
Sue .. you're not invisible. If celery tastes sweet to you, then you are definitely knocking out the refined sugar!
Have an avalanche of paperwork to complete today for my son's move... some of it's relevant ... some of it is not.
Ate too much processed stuff yesterday (homemade Stromboli --yum!) and holding on to some water today. Hard to drink ice water when it's so cold and I'm not overly fond of hot tea (unless it's that Egyptian Licorice!)
Kelly ... thinking of you this morning with your little charges and hoping that things continue to go well with the newest boys.

Beth you sound like you're in the zone, keep at it. One salty meal can really affect your water retention.
I've been on a paperwork processing jaunt myself, and just keeping at it 5 minutes at a time is the strategy that is working best for me.
Yesterday watched "the big Fat Truth" about 5 teachers losing weight by eating mostly plants and exercising regularly, it was pretty motivating to see my "peeps" dealing with the usual challenges but making better choices.
Super motivating.

Michele, We have a battery powered lantern that provides enough light for knitting or reading for the person sitting next to it. I miss the TV when the power is off.
Suebdew, staying off sugar becomes its own reward when you notice that you no longer crave all the sweet stuff you used to eat and can avoid it easily. Congratulations.

Sue - you are doing so well! You are not invisible, I love reading your progress on the no-sugar plan. It really does make a difference, doesn't it? And to think a few generations ago, sugar was really a treat and not an everyday component of so many foods. Glad you are liking the series!
Rita - I think I'm related to your husband a bit in the grease department, . Maybe it's because when I fry something, there seem to be splatters all over the stove and counter, often floor and who knows what that need to be cleaned. And so many cleaning products have "odd" odors to me = thanks to allergies I guess. So I just avoid it if possible. But, if you're not cooking fish every day or wild game, the odors do fade after a day or two. My own DH has his own quirks too, and some days I think how my life would be if he and his quirks weren't in it, lol. So far his good qualities are tipping the scale in his favor. Your patties looked delicious by the way.
Better get busy. Cleaner is coming at 8 today, she can deal with the cooking splatters I missed, lol.

Hello!
DH still horrible. He has taken the last of the antibiotics, so I hope his itchy/fiery skin will subside. He hardly slept at all. No energy.
I really thought I was going down with it, but it's still hovering in the background. I went supermarket shopping and felt very weak and achy, so I'm wimping out of the Swing session tonight. It was a big struggle on the bus.
I bought a whole organic chicken, which is in the IP to make him chicken noodle soup. I'm going to add Asian flavours to make a Curry Laksa (Malaysian) for me. One of my very favourite things.
I also bought everything I needed, bar last minute veg, for Burns Night on Friday. Only my son is coming and it will be low key because of DH not feeling well. My son doesn't drink alcohol, but will be bringing a spicy ginger concoction as a substitute for whisky. I bought AF beers. Both he and I adore haggis.
We have had to cancel picking up the kids from school on Thursday, but I hope to make it to my dancing class and do at least some of it. I'm also going to the dentist tomorrow, though DH has cancelled.
I just feel "off" and achy, but can manage at the moment.

I can't remember who it was that was having a bit of trouble with yogurt setting up in the Instant Pot. My tips are:1) Stir the milk halfway through the "boiling" stage to ensure that all the milk reaches the target temp of 180F.
2) Use a reliable thermometer when cooling the hot milk. Be sure the thermometer isn't touching the bottom of the liner, but is actually in the milk.
3) Cool the hot mix to between 110F and 120F. I usually aim for 115F. Stir a small amount of the hot milk into your starter to temper it before adding the starter to the hot milk.
4) Use a quality starter yogurt, from your last batch or from the store. Every 4th or 5th batch, start with new store bought yogurt.
5) Add extra probiotics if you want to - Align or Florastor or your favorite.
6) Use full fat milk or half-and-half if you want to enjoy the full benefits of probiotics. Use lower fat milk products if you are on a low fat diet, of course.
7) The longer it "yogs", the less sugar it will have, and the more tart the finished product will be. I like 10 hours, but some people who love really tart yogurt go as long as 15 hours. Straining some of the whey will further reduce the sugar content and make the yogurt thicker.
8) The Instant Pot counts up rather than down when making yogurt. It starts at zero.
I love home-made yogurt. I prefer whole milk or half-and-half (half whole milk & half cream for non-USA folks.) We have even made yogurt using heavy whipping cream. We used it as a delicious dessert yogurt, served with fresh fruit, for dinner guests. It would have been even better with stewed fruit, like Heather does.

Margaret: Thank you for your comments on Good Calories/Bad Calories. My dad had heart disease and was on dozens of pills every day. They didn’t help. He was among those were taught to worry about cholesterol and were given multiple different pills daily to control it. My parent’s long kitchen counter was lined with pills that poor dad had to take every day. I’m sorry for him in the past and glad we know better now.
Felicia: We made gluten free peanutbutter cookies because DH was craving a sweet treat. We’ve also made gluten free chocolate cake. The cookies were too tempting for me, and I ate too many, however the treat made him feel good. Bob’s Gluten Free baking mix is just the right thing for baked treats. You can follow your favorite recipe and avoid gluten all at the same time. Unfortunately, they are NOT low calorie. :ohwell:

Rita: I wouldn’t cook certain things inside our RV—or inside my kitchen at home. I don’t like arbitrary rules set by someone else, though. :noway: We have a propane BBQ under a covered portion of our deck that we use several times a week at home. We also have a portable tabletop version of the same thing in our RV. Stinky or greasy things are cooked outdoors. Bacon and eggs are cooked inside. We’re occasional RV-ers and you’re fulltime RV-ers. I am sure you know more about what to cook indoors or outdoors than we do. That said, your DH needs to respect your choices, too. :flowerforyou:
(((Michele))): I am sorry to hear about your power outage. We have a collection of antique oil lamps. We used them in our previous home on a regular basis when there were power outages. We have battery powered ones on our RV, and use them when we’re not plugged into electricity or when we want light outside on a picnic table. Power outages haven’t been a problem where we live now due to buried powerlines. Buried powerlines are more expensive to put in, but much easier to maintain. Your area has had more than its share of destructive weather this year. :ohwell:
Viv: Good luck with your dad’s situation. I hope your mom can get some help with his care.

Heather: I am so glad you mentioned Burns Night. I need to talk to DH about how he’d like to celebrate. His mom was born in Scotland and there was always a family celebration in his home. Unfortunately, his mom was the worst cook . . . :ohwell:
Today is not off to the best start. I didn’t get the garbage bins out to the street in time to be picked up, so we’ll have to store it until next week. I hope nothing gets too stinky. :ohwell:

I've been busy and unable to read or post for a while. Partly it's because work is picking up again, but also because my husband is on one of his trips abroad, and I decided to accompany him (for once). I don't usually, because these trips tend to last only a few days and cross multiple time zones. That leaves me out of whack for weeks. This time I went along because he was going to Cabo Verde, only two time zones west, and staying a full six days.
The first morning I went out jogging along the shore before sunrise, total 8 km. Today I couldn't start until 9 am for practical reasons. The sun was up and it felt pretty hot for me, though it was only 24C (about 75F).
/Penny, farther away from the than I've been for over 10 years!

Karen wonderful outline of how to make yogurt in IP, I love my weekly batch and thick and unsweetened with whole milk--yum
Made a delicious chicken soup with onion and spinach, I put a lime and bunch of cilantro which gave it all a delightfully different flavor-though I know cilantro is a love or hate herb--I love it and will eat it all week for lunches.

Allie! I’m feel like I’m stuck too with weight variations between 8 and 10 pounds lost in 4weeks. But just remember that is a lot of weight gone already! Just pick up a 10 pound bag of potatoes for a visual! Lol

We are in the middle of this goofy January weather. Good thing the kids were off school yesterday or they would have gotten a snow day (need an emoji that rolls its eyes!) Our little 2.25 “ (or major, depending on where you hail from) snow is melting. After 3 nights in the deep freeze, in the teens, it was 34° yesterday, and it’s 54° now. More snow maybe with the next system on the weekend? Glad I have no kids in school anymore, except college.
Things are starting to get into a better routine and I am down 1.8 lbs since last recorded weight, 6.5 lbs down since changing meds around and returning from Guatemala. Couldn’t be happier💜
Now I’m off to conquer the power point for school due tomorrow. Never have done it using the narration recording before, just presentations. Always something new when you go to school online!

I slept in this morning! I woke up at 5:30 am with such a sinus headache! Took my alka seltzer plus night time meds at that time, so was pretty much a rock until 11:00 am! My husband went exercising, and was not too whiny with me. I am feeling better, but will have medicine head all day.

Katla - they had a gluten free haggis in my posh supermarket! Never seen that before.
Don’t know why I ever roasted chicken! This is the second time I've boiled it in the IP and it is delicious! Plenty of fab stock which I reboiled with the skin and bones. Lots of lovely moist meat. I just put onion, carrot and celery in the water.
The dentist has already cancelled our appointments twice because they could not get their new dentist registered. They got a locum and we were due to see her tomorrow. (DH cancelled, but I was still on) This afternoon they rang to say the dental assistant has had a freak accident and broken her arm! So no appointment tomorrow! They have a substitute organised for Friday, so I'm going then. It's only a check up, so it won't interfere with Burns Night. That is the easiest party of the year! The haggis just warms in the oven. I will make the mashed neeps and tatties the day before, so there's really only the whisky sauce to do. I will set fire to the whisky to burn off the alcohol for my son, even though it isn't a lot. I've got a delicious, stinky Epoisses cheese for after. Starter will be rolls of smoked salmon and faux caviar.
Wish DH was feeling better, but I think he's coughing less.

Let's strap the gear on the bikes and GO!" ""A bunch of teenagers for a surprise birthday party? Sure! I'll run to the store and grab a cake and ice cream. Not enough bowls? We'll use mugs too. Clean-up? Oh. Yeah. Maybe tomorrow mirning, or could you please? Thanks sweetie!"
Don't worry, but implement some little things that please you now, if possible.
What tiny object is most precious to me? - I've started over from nothing three times now, so not a lot is left. I have a photo of a moose that climbed onto a boardwalk just about 15 feet in front of me broadside, then she turned her head to look at me (almost frozen, camera in position, terrified) heard the snap, turned ahead and stepped off the side and meandered away. You can see the clouds of mosquitos on her flanks. That was my motorcycle trip with husband and 10-yo DD in 1991. We made it through a forest fire guided by the RCMP and on up above the Arctic Circle to Inuvik, NWT, CA.
When you've had a tough day, what makes you feel better? - Cats being silly or talking to daughters.
What would you like to celebrate? - Seeing my grandkids all grown and settled in a life they are joyful to have.
What's your biggest wish in life? - It may sound petty given the huge challenge so many of you have with life-changing or mind-destroying illnesses, but I wish they'd discover a cure for macular degeneration so I don't lose my vision before I'm able to travel.
If you were to send a thank-you note to someone, who would you thank? - I'd thank my dear boss for taking a huge chance on a former office worker and hiring me as a Teamster. It gave my family a life instead of an existence to have a union job, vacation, wages, retirement and all.
Who is a good friend to you? - A gal I worked with as a trucker. She'd driven long-haul with her husband. She always has believed in me, been there for me when I REALLY needed it, and not been afraid to tell me when I needed to pull my head out of my nether regions and look at reality.
What small thing did you do recently that made someone very happy? - I didn't just pick up my friends from Ireland when their ride's car broke down, I took them to the vegan specialty store they'd hoped to visit on the other side of town and took them to the Pho place where they'd planned on eating so they'd leave next morning with full tummies.
