    Tonight is jerk chicken w/ cilantro-lime rice & corn on the cobb.

    Chicken is marinated in a mix that includes: pineapple juice, white onion, green onions, lemon juice, allspice, nutmeg, coarse ground pepper, soy sauce, garlic, habanero peppers, cinamon, brown sugar. I may be forgetting something. All of that is chopped up, poured over chicken breast pieces that have been salted/peppered. Then will cook the chicken tonight in a skillet on the stove top.
  • We had beef marsala with orecchiette pasta and pan-seared asparagus, finished with butter, cracked black pepper, and sea salt. (I didn't have asparagus because I don't like it; Boyfriend didn't have pasta because he's low-carb.)

  • Supper was supposed to be roasted chicken and dressing and gravy with green beans. Now, this is normally not that hard to do; I have the chicken roasted, carved into portions, and frozen in a pan with broth. I also have the dressing (I usually do it in muffin cups to portion it) ready in the freezer.

    Except I forgot to get the chicken out til 3 pm for a 5 pm dinner, and I didn't have the stuffing made. So I swapped Thursday and Wednesday, put the chicken in the fridge, and made spaghetti and meatballs instead. I'll make stuffing tomorrow morning when it's cool and then I can just warm things up in the microwave later in the day.

    Two hamburger patties with one slice of cheese halved on each one with peas, and bakec lays chips. I really like this meal 😝 I know beef gets a bad name, but I just squeeze it in my macros and it hasn't stalled my weight loss. The chips were a treat my hubby got for me on date night I squeeze in my macros too 🐥

    Tonight was turkey meat sauce over zucchini and summer squash with salad. I started paleo a month ago and luckily like this a lot, most of my recipes I can't use anymore!

    I made chicken Quesadillas for dinner last night. only 325 calories. I used a low carb tortilla, light sour cream, regular cheese (I can't make this change!!). It was delicious and filling.

    Tonight is probably take out unless I can convince hubby to make something. I have a medical procedure today and I don't expect to be able to do much standing afterwards.

    I did some batch cooking this pas Sunday, and that is my dinner/lunch this week.

    Tonight I'm having chili.

    For lunch today I had shrimp 'fried' rice made in a rice cooker. It was my first time doing that recipe, next time I'm adding more shrimp & more soy sauce, and a tsp of sesame oil.

    This Sunday I plan to make potato soup, sloppy joe (I eat w/ a fork), and try out a new recipe for garlic chicken.

  • For my partners: Beef and bean enchiladas, with rice and beans and a salad with the usual sour cream and pico de gallo and guacamole for one of them, and plain beans and sour cream for the other. I don't get along with beans and don't like enchilada sauce, so I am having a taco salad.
  • Partners had hot and sour soup, which I'm not fond of, and we all had char sui pork ribs. Girlfriend and I had fried rice, and we all had varying numbers (2, 2, and 6) of crab rangoon.

    My tummy is purring.

    Baked pork loin, green giant broccoli and cheese tots, and saute portobello mushrooms and fresh zucchini. The same for my husband.

    Tonight was a pantry staples night. I had Brussels sprouts and i sautéed them with aduki beans and put it over quinoa. For some last minute creativity it was good and filling.

    A French stew that I started making on Sunday (marinating veggies, herbs and meat in stock and red wine) and cooked yesterday. I often prefer to let stews rest for another day

    Roast for dinner tonight. Paired with warm, buttered french bread.

    Rump roast with 1 dry packet of each: ranch, Italian and brown gravy. Bunch of carrots in the crockpot and cook until roast shreds.

    Pumpkin soup with carrot, apple and orange juice as main ingredients. Veggies cooked with a big spoonfull of Patacks Rogan Josh I had standing about, lots of ginger, chili, coconut flakes, and skyr. Served with walnuts. And some more spices. it's very spicy and very delicious.
  • Bowtie pasta cooked with alfredo sauce, spinach, and chicken. Garlic toast.
