    I am so glad that your pal is okay.
    Up here our hospitals are overwhelmed with Covid, no room for other patients/surgeries.

    I am relieved that she didn't need surgery.
    Surgery with Covid floating through the hallways doesn't sound safe. Argh.

    And this was real for me every Tuesday in the elementary lunch cafeteria. The Cafeteria Ladies loved slicing that bag open almost as much as I enjoyed devouring it. I'm not sure how I have low blood pressure after 55 yrs of sodium buildup. I hope we feed our kids better than this at school today, but something tells me not.

    BTW, I am definitely taking you up to Kimberley BC when you visit. Beyond my abilities, but mountain hiking trails galore that I think that you and your hubby would love.

    2 glasses of wine while preparing tomorrow's side dishes ... Spinach Madeline and Rice Dressing. Roasted veggies I will make tomorrow.

    Quick Rice Dressing
    Serves: 6
    Ingredients:
    2 TB oil
    1⁄4 cup celery, diced
    1⁄4 cup bell pepper, diced
    1⁄2 cup onion, diced
    3 scallions, chopped
    2 TB parsley, chopped
    1 16 oz carton Savoie’s (preferred) or Richard’s Dressing Mix, thawed
    4 cups rice, cooked
    Sautee all vegetables (except scallions) in oil until soft, but not browned. Add dressing mix and bring to a simmer. Mix rice and dressing/vegetable blend and add chopped scallions. Blend well and serve.

    Spinach Madeleine
    Serves: 6-8
    Ingredients:
    2-4 (10 oz) pkg frozen chopped spinach
    4 TB butter
    2 TB flour
    2 TB chopped green onion
    1⁄2 cup evaporated milk
    1⁄2 cup vegetable liquor (liquid from spinach)
    1⁄2 tsp black pepper
    3⁄4 tsp celery salt
    3⁄4 tsp garlic salt
    6-8 oz jalapenos OR pepper jack cheese
    1 tsp Worcestershire sauce
    Red pepper to taste
    Salt if needed
    Cook spinach according to directions on package. Drain and reserve liquor. Melt butter in saucepan over low heat. Add flour, stirring until blended and smooth, but not brown. Add onion and cook until soft but not brown. Add liquid slowly, stirring constantly to avoid lumps. Cook until smooth and thick; continue stirring. Add seasonings and cheese which has been cut into small pieces. Stir until melted. Combine with cooked spinach. This may be served immediately or put into a casserole and topped with breadcrumbs. The flavor is improved if the latter is done and kept in refrigerator overnight. This may also be frozen.

    @MissMay I hope that you enjoyed looking at all your old pictures. ((HUGS))

    I've been cleaning out pictures for the past year so that my kids will not have so much to go through when we are gone. But I'm getting rid of all the fuzzy shots, things the kids took of scenery and zoos etc, yucky photos, and old christmas cards from friends & family. I have stacks and stacks of photos from my family and DH's family that I'm not sure who they are ... but pics from 100s of years ago. They seemed to have migrated down to me from generations. Not sure what to do with them. I'm not sure I would have the guts or heart to shred my favorites. But then again maybe I should consider it ... especially those from college years!

    My goal remains the same as it has been for quite some time, 16-20 AF days per month.

    I check in diary style. It works for me.


    Monday Nov 23 - AF - Early morning and fairly long day tomorrow. Anyway, I had been breaking my own rule for myself, not having 2AF days in a row.
    Tuesday Nov 24 - Drinks. Apparently my self control is not that in gear over the last week. I will get to my 16-20.
    Wednesday Nov 25 - AF - Had to get to that 16 although I was really craving an Espresso Bailey's with Apricot Brandy mixed in. It is not going anywhere, I can have it another day.

    Rolling total. 16AF days out of 25 days

    @MissMay Your town has it together! Only aluminum cans, plastic and paper are recyclable here and it's disorganized. My dad lays out, separately, in bins cleaned out tin and aluminum cans, plastic, paper and glass.

    @AR10at50 I'm glad your boy wasn't hurt. It's fun to watch kids' personalities played out. I have two teenage girls and a boy toddler. He is rough and tumble so often, so much harder on stuff than my girls. So far no broken bones, thank goodness, but he climbs on top of everything and scares me.

    @Lilylady3k I wouldn't throw them out. I've thrown many pictures out and later regretted it. Old photographs 100+ years are priceless. I have a 100 + year old picture of my great grandmother up on my wall, never met her. I have other photographs of strangers but I can't throw them away. Pretty cool to have pictures that old. I wish I had my grandmother's 100+ year old typewriter.

    Happy Thanksgiving!

    We are making a Turkey with an apple cider brine, made a NY Roast yesterday and BBQ Pulled Pork the day prior. From this, I am creating a Paleo holiday to-go combo platter I will deliver to my daughter tomorrow.

    I will set my drinking limit to 2 and may dash out to make those 2 bailey's mini's as my "dessert". Who knows how many extra miles I need to run to burn those off??

    @dawnbgethealthy : My favorite trending singer is Michael Kiwanuka, favorite songs "Cold Little Heart" and "Love and Hate". Two amazing and inspirational songs for me.

    I mumble the lyrics as I run outside, that's the extent of my singing! Well besides playing the home game Rockband that was popular about ten years ago :)

    Thursday Nov 26 - Drinks. Lots of calories still left over, very active day with my morning workout, a trip to another town for skating etc. Not sure what is up with me, I have definitely had more AF days in the past 11 months. Hoping to get at least a couple more AF days before the month is out.

    @MissMay Beautiful talented painting ... love it! It was sweet of you to think of your elderly friend and take her yummy carrot bisque.

    All my kids were with in-laws this year. We had my single sister and DH's single brother over as usual for holidays. Wonderful dinner. Very full tummy! 3 glasses of wine.
