Baked Oatmeal (this is terrific to microwave when busy, tired, etc)

BAKED OATMEAL
3 Cups rolled oats
1 Cup brown sugar
2 teaspoons ground cinnamon (I use more... like double that)
2 teaspoons baking powder
1 teaspoon salt (I usually don't use that)
1 Cup Milk... (I use condensed milk half milk/half water)
2 large eggs
1/2 Cup Melted Butter (or oil of your choice, I often use coconut oil or unsalted butter)
2 teaspoons vanilla extract
3/4 Cup dried fruit of choice... cranberries, raisins, raspberries, blue berries... (I have used fresh berries... does not keep as well)
I usually add 1 scoop of protein powder to boost protein content, flavor of your choice.
Preheat oven to 350 F or 175 C
Mix dry ingredients in a large bowl. Whisk milk, eggs, butter and vanilla. . then beat into dry ingredients mixing well. Add nuts, I use sliced Almonds then top with chopped walnuts...those are optional of course!!
Spread into 8x8 baking dish.
Bake in preheated oven for 40 minutes.
Approx. 393 calories per serving... 1 1/2-inch square.
