Just for fun: What is your favorite Pumpkin recipe that will help reduce temptations for non healthy treats? I love pumpkin but nobody else in the family is really crazy about it so I don't have the temptation around the house. I like to make a Easy Pumpkin Spice cake: I use 1 box of Duncan Hines Moist Deluxe (Spice Cake) Mix & 1- 15oz of Libby's Pure Pumpkin. Mix and bake at 350 until fully cooked. Very yummy & easy to make. If you want some added sweetness you can always add some fat free cool whip on top as frosting. Store cake in fridge. Keurig also has a seasonal coffee called Pumpkin Spice by Green Mountain Coffee that is really good. I always order me a couple boxes for the Holiday months.

I have made some easy and tasty wheat pumpkin pancakes. I just use the aunt jemima wheat mix and buy the pumpkin can, use fat free milk and add some cinammon, nutmeg, and pumpkin spice. (I'm not much of a cook LOL)
