    Supper tonight was a couple of bowls of jambalaya. I used canned chicken and frozen shrimp, but the sausage was homegrown, whole hog sausage my BIL made when he butchered his two pigs. I was thinking of cooking gumbo today, but Margie decide she would rather have jambalaya. It turned out very good, and there is always another day for the gumbo.

    Upon further review, I decided to have a sausage and bacon sandwich with four cheese Mexican and some of the rice and stir-fry veggies as well.

    Here are some homemade things from recently...I need better lighting and white plates I have determined, LOL. I'm also committing to try to do weekly meal plans this year, even if some days are just leftovers or pizza, putting it down ahead of time should hopefully help with keeping my sanity now that the new year is really off and running. Last week I cooked every night - and ate the leftovers for lunches every day...

    Sunday - Turkey Enchilada Verde Soup (no pics)
    Monday - Pan Seared Pork Chops with Maple Bourbon Glaze, Roasted Potatoes/Carrots and Pretzel Bread:

    And actually it was a while back Fajita Friday. Not doing beer or any alcohol during the first few months on my journey back to health but this meal was made in a healthy manner. Lean beef/chicken fajitas, homemade pico de gallo, guacamole, white sauce, and chips.

    Both of these look great

    Dinner for me was penne pasta in tomato sauce with ground chicken and a boccachini salad.

    Sister and BIL came over to watch the ball game, so I didn't eat supper at work, and got out of there as quick as I could. They brought a couple of Pizza Hut pizzas. A ham and pineapple, and a pepperoni with Italian sausage. While not homemade, it was nice to have a couple of slices. Pizza is a rare treat for me these {healthy eating} days.

    I also had a bowl of the jambalaya and the last of the Cole slaw. I went over on calories, but I have been under weight all week.

    Made a huge pot of marinara, so 2 servings of frozen mixed veggies, 3/4 cup marinara, 1/2 cup ricotta cheese mixed up. It was delicious and killed the hankering for pasta.
