    Supper tonight was all Thanksgiving leftovers. Some served as is, and others refurbished. Spicy tortilla turkey soup, turnip greens, ham, and turkey salad sandwiches with cranberry sauce. I had a bowl of spinach fruit salad as dessert. It was all very good. And now all the turkey has been used or gave away.

    Scrambled egg with ham and scallions with a sprinkle of shredded cheddar jack cheese, all wrapped in a whole wheat tortilla.

    Tonight I made a big ol' salad of mixed greens, alfalfa sprouts, cucumber, asparagus, red bell pepper, green onion, mini portobello mushroom, chopped turkey, roasted veggies (red potato, brussel sprouts and carrots), chopped pecans, raisins, pecorino cheese, a tbs of ranch and some Mrs. Dash Fiesta Lime seasoning; and a clementine.

    Quinoa/kale sautee from costco and peas topped with sriracha and a dallop of sour cream! kinda weird but rly yummy :))

    Yesterday evening I was going to make another Shepherd's Pie, but then I realized I didn't have another can of cream of mushroom soup. So I had to throw that one out the window until next time(next Monday I will most definitely buy some more stuff for the pie, so I can make it multiple times-it tastes great as leftovers). I ended up having yesterday's supper just a bit ago.:

    A whole can of Progresso Chicken Barley soup, and a glass of Stars & Stripes Root Beer to drink

    Pics from Thanksgiving weekend - I'm sure everyone is tired of seeing the turkey/mashed potatoes/sweet potatoes pictures... so I will refrain. However my family does a
    "throwdown" when we get together, which seems ludicrous at Thanksgiving in light of all the other food but... this year it was a Pumpkin Challenge. Here are the entries:

    Dinner tonight was a roast turkey sandwich with Swiss cheese, green onion, mini portobello mushroom, tomato, roasted brussel sprouts and carrots, mixed greens, mustard and some of the mixed sprouts I made (those radish sprouts have a kick to them!); and a salad of mixed greens, sprouts, red bell pepper, cucumber, strawberries, Mrs. Fields Fiesta Lime seasoning and a little Ranch.

    I had a salad made with spinach, tomato, cucumber, carrot, bell pepper, onion, ham, turkey and cheddar. I think that was the last of the turkey.

    Also had a couple of turkey salad sandwiches, and some Morning After, a mix of ham, turkey, onion and tomato. I cooked up a bunch of it the morning after Thanksgiving to make omelettes and had some left over. All in all, a pretty good supper.

    Crunchy Taco Turkeyburger Helper is yesterday's supper, but am having it now(2.38 in the morning). Just made it. What I did was made the Hamburger Helper with ground turkey instead of ground beef. It sure looked like it turned out great. I bet it tastes great too. I will have to come back in a little while or so and show a pic.

    The most amazing turkey soup ever. It turned out so delicious I almost had a second bowl...

    That was the last of the leftovers. The candied yams got turned in two loaves of candid yam bread with pecans. The sausage stuffing got turned into stuffed mushrooms.... Finally it's all done!
