    We had salmon, broccoli and mashed potatoes and now about to enjoy coffee and some fresh-baked banana bread (made with walnuts and homemade butter, mmmm)

    Everything looks good and sounds good so far.

    Still haven't figured out what I am having, and now I am having a sweet tooth...Looks like I need to do dishes and eat some sweets. Yay.

    In March I needed to be eating low calorie salads. Last night's salad was 448 calories.

    Made a big salad of mixed greens, mixed sprouts, asparagus, cucumber, green onion, cherry tomatoes, roasted red potato, red grapes, raisins, chicken, pecorino cheese, Mrs. Dash Fiesta Lime seasoning, and a couple tsp of ranch; halved dried apricots with marscapone.

    Mediterranean quinoa (spinach, tomato, feta, olive oil) and butternut squash and goat cheese gratin with a chicken Andouille sausage.

    I'm sure my husband would not eat the butternut squash and goat cheese gratin but it sounds amazing and I would love a recipe if you would share!

    The gratin is super easy. I just cube a butternut squash, put it in a casserole with a half cup of almond milk, sprinkle with about 6-8 ounces of crumbled goat cheese, sprinkle with salt and pepper, and bake at about 400 til done (around 40-60 min, depending on how big the squash was). If you want, you can add panko on top to make a crispy topping, but I usually don't waste the calories. Sometimes I make this with gorgonzola instead of goat cheese and it's also tasty, but a lot saltier, so don't add as much salt. Sage or nutmeg are also good ways of mixing it up.

    Dessert tonight, I made a cup of hot cocoa and froze it, then blended it with half a banana, vanilla almond milk and whipped cream. Super yummy!

    Ended up making another new dish. Cheese Ravioli and tortellini with sauce. It was really tasty.
