I think I'm going to make homemade burgers topped with pepper jack cheese, avocados, and grilled onions. With a side salad and homemade fries. Boyfriend will have the buns, I'll have my burger wrapped in lettuce.0

I went ahead and had Taco Bell for lunch (it was raaaaaad), so now I'm thinking a simple dinner -- veggie burger on a sandwich thin with garlic & herb Laughing Cow, side of steamed broccoli and/or a straightforward garden salad. I don't have a ton of calories left for the day, which is why I'm thinking small.0

tonight is pork back ribs with a homemade rub (brown sugar and various spices) covered in bbq sauce done in the slow cooker all day so the meat falls right off the bone, roasted potatoes, and a garden salad with a homemade balsamic vinegrette0

Margie cooked supper while I napped through the Cup race. It was rice, turkey & pork sausage meatloaf, steamed carrots and Brown Crowder peas with pork sausage. It was all very good. The meatloaf had just enough hot pepper to make you pay attention.
Mamma and Sister picked huckleberries down at the pond this morning. Sister borrowed a baking dish and returned it half full of huckleberry buckle. That was nice of her.

Korean style Quinoa bowl:
Quinoa with grilled chicken, shelled edemame, Shredded carrots, shredded cucumber, sauteed Kale and you can plop a poached or fried egg on top and cover in siracha and Gochujang sauce. YUMMM0 -

I had leftovers tonight. It was meatloaf on rice, peas, green beans and potatoes, and pita bread. Pretty good. {and I may have a piece of that buckle when I get home from work}

Supper was mostly a couple of sandwiches. One was a ham, cracked pepper turkey breast and Swiss with mustard and Miracle Whip. The other was meatloaf with Pepper Jack cheese. Also had steamed carrots, peas, and green beans and potatoes.
Dessert was half a slice of huckleberry buckle with no sugar added ice cream. Yum.
Larro's Sister's Huckleberry Buckle recipe:
Topping
1/3 cup sugar
1/2 cup all purpose flour
1 1/2 Tsp cinnamon
1/4 cup softened butter
1 Tbs chia seeds {Optional}
Batter
1/2 cup butter
3/4 cup sugar
2 eggs
1/2 cup milk
(2 cups all purpose flour, 1/2 Tsp salt, 2 Tsp baking powder) or 2 cups self rising flour
2 cups huckleberries {or blueberries}, washed and stemmed
Stir topping ingredients until crumbly. Set aside.
Preheat oven to 350F. Grease 9" cooking pan.
Using a mixing bowl, mix sugar and butter. Add eggs, stir in milk. Mix until smooth. Sift flour in another pan. Stir in batter. Add berries to batter and spread in pan. Sprinkle the topping over batter. Bake for 35-40 minuets, or a toothpick comes out dry. Makes 8 servings.0 -

Leftovers from yesterdays Cinco De Mayo lunch at work. Made a pulled pork burrito with lettuce, onions, olives, cheese, guacamole, sour cream, and tomatoes; chicken/cheese/chili and tortilla chips; dulce de leche cake.
Lunch is my supper today. Will probably just have some yogurt with blueberries tonight.0
