    2 serves of bran flakes cereal, a giant ripe pear, and 2 cups of coffee with lowfat milk. That is what I ate today, and it is a pretty typical breakfast for me.

    Although it was noon before I ate, it was the first meal of the day. Turkey chili with 4 cheese Mexican and sour cream. Also had 100g of my latest smoothie and 100g of my low sugar Greek chocolate pudding.

    We had a breakfast potluck at work this morning. I made some mini scrambled egg muffins for the potluck, and also brought in celery and peanut butter, cherry tomatoes, red grapes and clementines. Someone else brought in brownies topped with pomegranetes and some kind of pecan, carmel, chocolate, pretzel candy (yummy!). I had a little of all of it.

    My most favorite breakfast as of late is a Thomas light english muffin, 2 slices of canadian bacon, 1 wedge of laughing cow cheese with 1 egg and 1 egg white! YUM!

    Egg white wrap

    I cook egg whites and add sliced almonds. Spread hummus and guacamole on a whole wheat wrap and add the egg white omelet in it. It tastes so good! Oh and green tea every morning.

    This morning: Honey Nut Cheerios, a banana, and Dannon Light n Fit Greek Chocolate Cherry
    Tomorrow morning: a bowl of Oikos plain Greek yogurt, Nature Valley granola, and frozen peaches. Same thing every Tuesday.

    Then later in the morning I had 1/2 a chorizo, egg and cheese burrito and 1/2 a potato, egg and cheese burrito with tomatillo salsa.

    The burritos came from a Mexican restaurant. The recipe for the protein bars...

    Dry Ingredients
    • 2 cups old-fashioned oatmeal
    • 2 tbs vanilla protein powder (original recipe called for 4 scoops, but that was too much for me)
    • 2 tbsp ground flax seed
    • 1 tsp baking powder
    • 1/4 tsp salt
    • 1 tsp apple pie spice (pumpkin pie spice is good too)
    • 1/2 tsp groung ginger
    • 1/4 cup raisins
    • 1/2 cup chopped pecans or walnuts
    • If you like it sweeter, add 1/4 - 1/2 cup brown sugar

    Wet Ingredients
    • 4 large egg whites
    • 1 whole egg
    • 1 1/2 cups milk
    • 1 cup pureed pumpkin
    • 1/4 cup plain Greek yogurt
    • 1/2 cup unsweetened applesauce
    • 2 very ripe bananas, mashed
    • 1 tsp vanilla extract

    Preheat oven to 375 degrees. Combine dry ingredients in a large bowl. In a medium bowl, combine wet ingredients. Pour wet ingredients into the large bowl and mix well.

    Spray a 8 inch or 9 inch baking dish with non-stick spray. Pour oatmeal mixture into pan and smooth top with a spatula. Bake for 60 minutes until top is beginning to brown, or inserted knife comes out clean.

    Let cool 10-15 minutes in pan, then invert pan on a cutting board and cut into 8 bars and allow to cool completely before cutting. Store in the refrigerator. They are great warm or cold, and reheat well...I prefer them chilled (they are like portable oatmeal).

    To freeze, make sure oatmeal bars are completely cooled first. Then wrap each bar in wax paper or parchment paper and place in a large freezer bag or container. For quick grab and go convenience, you can also place oatmeal bars in individual snack-sized plastic bags, then refrigerate or freeze until needed.

    Makes 8 large bars (for snack size, cut into 16 bars)
