My sister gave me this recipe about a year ago and I am one to also watch my sodium. I love this recipe over a bed of lettuce. I have modified the recipe by using the following:
1 can diced tomatoes no salt added
1 small can diced green chiles
1.5 cups black beans, initally dried, but soaked and cooked. The do make no salt added and reduced sodium canned beans
Newman's Own All Natural Chunky mild salsa (only 65mg Na for 2 TBSP the lowest I can find for jar salsa)
1 Tbsp chili powder (not sure if you are all aware but each tsp carries about 40mg Na)
My calcuations for 6 servings

This is amazing and SO simple! I'm actually eating as we speak (...or type). I too used Laughing Cow - Light Swiss. Used 6 wedges, and it's perfect. I also added some broccoli since I had a bunch extra in the fridge. It looked a little watery, so I drained most of the liquid before adding the cheese. Yummy yummy yummy! And SO healthy. I have mine set at 8 servings, of about 3/4-1 cup. I'm having 1.5 servings at 310 calories! I'm thinking I might have it for lunch tomorrow in a wrap or something. Thanks for the recipe!0

I would lower the sodium significantly by chosing no salt added tomatoes, and canned green chilis separately. (you can always add more spice if you are missing the rotel's spice) and I would use no salt black beans. Without running the numbers, I would bet that drops the number down a lot. And if you need some salt you can add sea salt which is lower in sodium than regular salt.
I was going to make chili when my brother comes in a couple weeks but this sounds delicious. I may have to change my plan. And serving it over brown rice sounds awesome.0 -

i made this and 6 servings are huge! ...i only used half the corn and next time i may do half the can tomatoes ...it was a little soupy for my liking...but the next day leftovers were more solid. it was really tasty and i will be eating it tonite for the 3rd nite...i use about 1/2 cup of chicken mixture and lettuce/tomatoes, scallions on a 80 cal whole wheat wrap... very low cal and delicious!0
