    What's cauliflower popcorn?

    Wrong! just wrong!

 it is just a fancy name for roasted cauliflower with some spices or you can do it with just garlic salt and then add parmesan after it is cooked.

Spent my early years in a very poor family that couldn't afford fresh fruit or vegetables so didn't really know what they were until I was about 8 and started to notice what my friends' families were eating. Up to that point, I considered tinned peas a delicacy!

Discovered as a teenager that dang, I really love the fresh stuff and ended up being a vegetarian for years and years - - refused to eat anything out of a can or box.

I am lucky in that I live about two blocks from a farmers market so never have to worry about not being able to have it available. I probably go there three times a week to replenish the fridge. I can't imagine not having vegetables as a huge part of my dietary intake now.

But I've never seen any of the others.

They grow purple cauliflower now. It is very very purple too. Crazy.

and this includes canned spinach and asparagus and all of that wonderous nastiness.

dear god- I'm so sorry for you!!!

LOL! It's so funny when my mom eats at our house--

mom: That asparagus was sooooo good, what did you put on it?
me: Just salt and pepper and then we roasted it at 425.
mom: Oh, I just usually eat mine from the can...

She's the same way with a lot of meats, too. I never knew steak and pork chops could be anything but gray blobs of protein until I met my husband! I can't blame my dislike of veggies and fruits only on her cooking because even now, knowing how to cook them and prepare them well, I don't love most of them. I'm lucky that my DDs both got my DHs tastes for foods and like almost everything, especially fruits and veggies. Sometimes they even fight over who gets the last berries or cantaloupe or green beans! It's so weird to me.

heh- did that with zuchini and asparagus for BF- he *started* to come around to eating them a little.

My mom made cranberry sauce- from you know- cranberry's and my dad sat down and went 'what's that"

she was like um- cranberry sauce-

    but it's not in slices???

Apparently he'd never seen it anything other than a can!!!!!

Bacon- add some bacon to your veggies- I'm addicted to bacon wrapped asparagus- bacon makes EVERYTHING better! :D

Bacon so makes everything better! Except brussels sprouts and cauliflower. Those are two that I have not learned how to like and I think I'm done trying! Even my DH who likes everything hasn't liked a single brussel's sprout recipe we've tried, even one that involved roasting them and bacon.

not worth it. You dont' need to eat every veggie out there- why waste presses veggie's on crap you don't like!! just eat more of what you do like!!!

I eat 2 or 3 times regularly- i do no like- nor have I ever liked- or will consider liking brussle sprouts. i don't even bother LMAO
I eat steamed cauliflower- and roasted- but I don't go out of my way for it. I love california blend mix steamables though.

I eat that and asparagus and then bell peppes- onion- tomato in my eggs almost daily- I'm okay with my intake LOL

I do large trays of roasted vegetables...carrots, potatoes, cauliflower, brussel sprouts...

I also include vegetables in my pasta casseroles such as spinach, I also do turkey burgers with zucchini and grated carrots.

Then there is V8 juice that I drink every morning...2 servings of vegetables and a bunch of potassium.

I too roast a few large trays of veggies and keep in Tupperware to eat on through out the week. I experiment a lot with different veggies. My new found favorite is: chopped purple cabbage, sliced zucchini, chopped sweet onion, sunburst tomatoes. I add olive oil, sea salt, cracked black pepper, garlic powder and cumin. Yummy...but it's easy for me. I love a lot of veggies.

I will eat them if we have them on hand. I do try to get them in. Eating healthy can be so expensive and if they don't get eaten right away, they go bad. I do try to incorporate them into every meal and snacks. Just not always breakfast, although a handful of spinach or a half an avocado in my post workout protein breakfast shake does happen once in a while.

So, I guess I'm not one of those people that have anything against vegetables. Other than I wish they were cheaper! Thankfully we are getting some things planted this year. That will help.

This is where delicious frozen veggies come in handy.

Can you tell me how the cabbage tastes when it's roasted? I have learned to like it raw, but don't go for cooked cabbage at all, but your blend sounds like it could be good.

Ok let me start by saying I am not one of these people that thinks everyone needs to eat "clean" and cut out all the "junk" in there diets. I love pizza and burgers and ice cream still.

If I don't exercise my calorie goal is 1300 a day and I would starve during the day if I didn't eat a bunch of veggies with each meal, but I see many people's diary's on here where they are lucky to have one vegetable all day. I mean there are lots I don't like either but there are many ways to hide the taste like cauliflower popcorn, or in your pasta or rice dishes. Also there is lots of talk about macro nutrients which I get but what about all your vitamins and minerals that lead to a well balanced diet?

One of the reasons I am asking is I just had my physical today and though my doc is encouraged by my progress she did make a point of asking if I was eating the recommended servings of fruits and veggies and getting enough calcium. So just wondering.

    i love veggies

i eat at a deficit for weight loss
    track macros for nutrition
track 5-7 a day becasue i want to and becasue it will generally mean i'm eating more healthily

i don't think anyone has it in for veggies, some people rightly say that for just weight loss you can eat anything as long as it's at a defici, and their right

me - i want long term health and welll being, so I'm going for defici, + nutrition

    IIFYM eat what you want

When I cook it like this it has a bit of a sweet flavor actually. The cumin can possibly pull that out, but it is actually very mild compared to regular cabbage (and we love both in our house). I've roasted it until it's super tender and I've roasted it for a shorter time to leave it a bit crunchy and I love it either way. We love the small tomatoes with the cabbage especially.

I LOVE veggies!!!! They're my primary food group, lol. If you like them, eat up!! They still count as calories, but you can eat so much of them and not gain weight. I'd rather have them for carbs than actual carbs, I think they're more filling and most have hidden protein! Broccoli is my favorite food :)

ETA: I've found roasting cabbage is a much more milder taste than if it's boiled.

    What's cauliflower popcorn?

Here are links to two different versions that are both pretty good.

    http://www.tasteofhome.com/recipes/cauliflower-popcorn
    http://www.food.com/recipe/popcorn-cauliflower-217432

But popcorn is popped corn. You can't even pop a cauliflower...

I once tried making a cauliflower in cheddar sauce recipe with purple cauliflower, figuring it would blanch as it cooked. Instead, it stayed purple and the sauce turned lavender. Tasted fine once I convinced myself to actually eat it...but that took some doing. It looked like something out of Dr. Seuss.

The only purple vegetable I can think of would be eggplant (which is technically not a vegetable).

    Purple carrots
    Purple peppers
    Purple potatoes
    Purple kolrabi
    Purple cabbage

Anyway, I wouldn't eat anything (fruits, veggies, or anything else) that was purple or green.

On eye, one horned flying purple people eater...

Okay, now I WANT roasted cabbage for dinner. I have most of a head of cabbage at home that needs used up anyway, so I think I'll have to try roasting it and tossing it with some caramelized sweet onion. I think I'll use some bacon, too, just for bacon's sake!

I don't have anything against them. They didn't run over my dog or anything.

It just so happens that for the majority of them I don't care for the taste.

I like most vegetables. The problem is if I don't shop for them I don't usually get the ones I want or my wife just gets frozen veggie bags. Lately I've been trying harder to get them into my diet though. I'm going to be having lettuce on my lunch sandwiches at work and a green bellpepper in healthy dip for a snack. I used to juice a lot of fruit last year too but kinda fell out of that fad I guess.
