Bump! These will go perfect with my soba noodles and Annie Chun's Shiitake Soy Ginger sauce! (Actually, might use the sauce in the egg rolls... yummmmmm).

These look, and sound delicious. Vegetarian egg rolls are hard to come by even in Chinese restaurants since most places add pork. Thanks!

So I made these last night and they were fastastic! One word of caution though. I made some slight alterations (added shrimp and water chestnuts, took out the mushroom (roomie's allergic) and zuccini and added some extra spices/sauces) and it did increase the calories per egg roll. I'm on a higher calorie intake due to the amount of weight I have to lose, so it wasn't a big deal for me, but make sure that you figure out the calories for each one with the specific ingredients and amounts that you use.

OMG. I made these and put them in my Nuwave! This was great. They were crunchy like being broiled and it only took 10 minutes to cook them. Wonderful stuff. Thanks for the recipe.
