    RTL and VT..thanks so much for the well wishes! LOL As you see more of my posts you'll learn that my life is always this hectic! I am a small business owner, so it means I am ALWAYS working! But, I love it! And, it gives me a flexibility I'd never have in a 'real job"...both my sons have ongoing medical issues so I need to be able to take care of them at the drop of a hat!

    I squeaked into the office just in time for the conference call..which was amazing since i got no sleep last night! I took my son to the oral surgeon (the right one this time! and thanks to perserverance and several calls to the insurance company found a doctor on both our Medical and dental plan so instead of $1000 out of pocket..only $141.80! Woo Hoo!!! I even managed to run home this afternoon and get a little work done!

    On weight gain...I have been working really hard on my sodium and keeping in my calories..I think I only went over twice last month (and once was my birhtday dinner)..but its so frustrating to work so hard, be working out get on the scale and it jump up! Of course for me, the day after i logged a 4 pound weight loss for a total of 22 pounds for the month..guess what happened? (To the guys on the board...just close your eyes for a second)...UGH! I woke up and had a 13 pound weight gain! we all know only one thing can cause a woman to gain THIRTEEN pounds overnight...yes..mother nature hates me! Anyone have any suggestions/tips to minimize this other than limiting salt in the diet??????? I'm so over it! It's like I only have 3 weeks a month to lose weight! UGH!

    Good almost evening my fellow HEETers! I lost my phone/cable/internet last night during The Biggest Loser. We had a big clap of snow thunder and lightening and .......POOF........out went all of my service. I'm just so grateful it wasn't the electricity! We just regained it about and hour ago and we just had our street plowed. We got about 15 inches. I won't make it to my martial arts class, but I did get a good amount of shoveling in!

    Phly - You can garden vicariously through me anytime! I just uploaded some pictures off my camera that DH took and am going to upload them to my profile. The Carrots I'm always talking about, some of our Tomatoes, Cabbage and the Golden Beets DH pulled yesterday. Check them out and look at the gorgeous color!!

    Arf - Most Excellent Job working that Out of Pocket!! 13 Pounds overnight?!? :noway: Is that typical for you? I can't say as I've ever heard of anyone gaining that much. If it's not typical I'd say it's got to be a fluke of some kind. ~OR~ A combination of Mother Nature and building muscle from all the exercise you've been doing. And just think of the loss you will see next week!! I wouldn't fret about it yet. See what happens next month. :smile:

    R2L - The door is open anytime if you want to come for dinner. :bigsmile: If you've read my profile you can see that I enjoy Food Photography. The problem is, during the winter I can't do it much. I have AWFUL inside lighting and everything comes out looking yellow and no amount of editing can fix it. But now the days are starting to get a little longer and I got dinner done early and had just enough light to snap a few pics. I'm going to start my own Blog on this site so I can share some. I was going to upload them here but STOOPID Photobucket is giving me a hassel.

    Let me do some playing around. Maybe I'll get the blog started tonight.

    @VT...yes unfortunately this is normal for me! UGH! It's awful! I am gaining muscle which is part of it...i've gone from 94.3 pounds of lean body mass to 100.9 pounds in a week! But, I have also gone from an average of 43% water to 48%! See, mother nature DOES hate me! Everyone laughs at me...but I am SOOO throwing the hugest menopause party at the first sign its near!!!!!
  • The Quesadilla was a huge success. My son said it was the best thing I ever made.

    I'm with you here, and you have my sympathy. I thought I was bad I normally gain 5-7lbs overnight when that time rolls around.:grumble:

  • It's my own creation morphed from two different recipes. I'm going to call it Grecian Chicken. It's Chicken Breast rubbed with Garlic Powder, Oregano and Basil, stuffed with Feta and Kalamata Olives, pan seared quickly on the outside to get the crust done then finish in the oven. Drizzle with Lemon Juice when it comes out of the oven. I just put the recipe through my recipe software, my breasts were 7 oz each before cooking so I figure the two breasts would serve 4 (conservatively speaking - DH ate his entire breast). Total calories...268. The salad was 63. I had planned on serving it with Couscous but I was losing light and didn't want any more *white* on the plate as it was. Besides, as soon as DH walked in the door he dug in so I just called it complete.:smile:

    If you like Greek/Mediterranean flavors this will sure put a zing on your tastebuds! :tongue:

    @ VT...lol lol at the doctor! I swore after the nightmare we went through with our last child ( we both nearly died) that my last visit to a doctor would be my 6 week checkup and low and behold I have kept that promise! He turns 15 in April! So, no my doctor does not know..but its always been this way. And, it does all come off in about 4-5 days....but its frustrating none the less. I really thought eating a lower sodium diet would do the trick..maybe I just need to do it longer! And, have you noticed..it only happens at the most inopportune times! LOL

    Your dinner looked AMAZING! we had a roast with veggies. Tomorrow, homemade spaghetti sauce and whole wheat pasta for dinner! Yum!

    btw..I tried the vitatops brownie for dessert tonight and it is amazingly good! It's only 100 calories and tastes like a real treat!

    Well..tomorrow is another hectic day...the other son has a dental appointment and I am working from home and then its boot camp again....Hopefully I wont be dead after! Cuz I'm hurting pretty good right now! LOL I have been super good about drinking my water...but my legs hurt so bad to sit down that every time I took a sip of water I thought to myself..you are just making this worse on yourself..cuz in five minutes you are gonna have to go to the bathroom again!!! LOL

  • Morning everyone! Hope everyone has a wonderful day! I am off to workout and have breakfast
    So I hav decided to try something diffrent. Since I do most of my vigerous housework in the morning, I figure why not have my fist meal be a little bigger, and my last be a little smaller? After dinner I don't do much, so it doesn't make sence to eat a large meal just to sit around and relax. Or does it? Idk, let me know what you think.


    Todays menu:
    breakfast, 2waffles with margrine and syrup
    lunch, turkey sandwitch on wheat, activia yogurt
    supper, chicken &side (not sure what side)
  • Just finished an awesome breakfast: Egg White Omelet with feta and spinach. Off to walk this morning. Going with a friend who is not quite as tall as I, so it will be a nice leisurely walk :) I will have the bean salad cold for lunch today, and thin spaghetti with marinara for dinner.

    VT - Your Dinner looks amazing!

    Arf - Those brownies sound so good. I have been eating the Jello Mouse Temptations when I have a sweet tooth, but I really miss brownies.

    Phly - I am in the same boat around that time. Like a need something else to depress me when mother nature rears here mean little head :) And your menu today sounds great!!

  • Good Morning everyone!! I have a very busy day ahead of me. My hubby, little man, and I have to go and pay bills and do some shopping, then I am getting a haircut, not sure what kind yet but it will be different. I am tired of the same old thing. I have had it long for awhile now. Now I am not saying that I am going to go super short either. I will be back later.

    Arf - you and R2L - seems like the two of you are just going, going, all the time! LOL at the sore legs and drinking water. I know exactly what you mean!:laugh:

    Phly - I think eating larger meals early in the day probably makes sense. I would be all over it and sometimes I can manage it depending on what's for dinner but for the most part I save the larger meals for dinner because of DH. Your menu today looks great! Was your friend able to get out from under the snow?

    Chris - I had to chuckle. You must be pretty tall or your friend is pretty short. DH and I look like Ma and Pa Kettle. He's the tall thin one and I'm the short fat one. He and I have had this conversation a dozen times that whenever we go anywhere I get twice the workout because of his long strides. It takes me two steps to every one of his.:tongue:

    R2L - I CAN'T WAIT to see the New You!!! Please post pics ASAP!

    I was up til MIdnight last night fussing around with my blog and pictures. I was like a bulldog with a bone and wasn't going to give up until I figured it out but it finally got the best of me and I threw up my hands. Before heading off to bed I sent another MFP'er who has a blog with photo's and this morning I had my answer. I never would have figured it out but I know how to do it now so I'm off and running.

    Got several loads of laundry already started, had a breakfast of Peanut Butter Toast with Tomato and sliced fruit. Check out my blog to see the pics!

    Off to take care of some stuff. I'll check back later!

    Lilac and Plume...you still out there? Just want to make sure you got yourselves dug out!
  • O yea, my dh went to get them yesterday, they called and needed to get home to take care of their pets. My hubby went to find them(they informed us that the entrence where they were was blocked by stuck cars, and they would have to walk.) and as hes going down the road he sees 1 small person, and 1 largerperson hauling butt thru the snow. The snow was up to their waist ! Poor thing she only weighs 90 lbs. In snow up to her waist. She is one of those unlucky people who cannot gain. It's cinda scarry. And man can she eat!:noway: But she has to eat all day long or wither away to nothng... n-e-ways yea she got out and is now calling me and the dh her heros, me for taking care of the kid and him for rescuing them.

    Good morning everyone. We faired pretty well where I am. We got straight snow, no ice or freezing rain.

    VT that dinner looks so good. I would so be the only one eating it. (no one else here likes feta or olives, I love em.) I wish I could come visit your house for dinner. I will be sure to look you up if I'm in your area. I would be happy to split a chicken breast with you. I can't wait to see pictures of your garden.

    phly I'm glad you were able to help your friend. I hope all goes well.

    Think I am going to do wii fit today instead of treadmill. Eating my lemon chicken tenders with salad for lunch. Don't have a dinner plan. I guess I better get on the ball with that.

    Dragged my sore body out of bed to be at dentist office this morning...arrived with the son in tow and there is a note on the door..."we're closed today for a staff meeting. We made an attempt to reach our patients, but we are sorry for the inconvenience" WTF!?!?!?!?! So son missed 1st block and I got out of bed for NO reason! UGH! Came home found a new dentist and have an appointment for boys next week! Fortunately the school was as outraged as I was and counted his absence as a dr appointment!

    A friend asked me to run a 5k in april. I have been toying with the couch to 5k program and decided I am going to do it! My poor legs are just gonna have to suck it up and deal! LOL

    Had a good lunch, and doing some chores. Did a little work. It's a good day!

    @phly...you are a hero!!!

    @RTL...can't wait to see the new do!

    @VT- sounds like a yummy lunch!
  • VT, I stand at a towering 6'2". I am four inches taller than my husband :)

    And, yes I am a full foot taller than my walking buddy. She claims that to keep up with my walking stride, she would have to run :)

    LOL @ Reiki....it's so nice to have another giant on the board..and one with a midget husband as well! LOL LOL I'm 6' tall and my husband is 5'7! He's the shortest one in the family...but I am just days away from NOT being the tallest one in the family I am sure of it! My 17 year old son is my height now, and my 14 year old son is about 1 1/2 inches shorter than me! One more growth spurt is all it will take!!! And, there's even a bit of hope for the daughter, who though she is 21, is still growing and she's about 5'9!

    Plume - I am just getting used to eating Feta. Up until a few years ago I had never touched the stuff. Still only eat it on/with certain things but I'm getting better about it. DH is one of those people who will eat anything...Escargot, Anchovies, anything. There are times when I'll cook something just to use a new ingredient or try a new cooking technique and never touch it because of the funky ingredients but it's something DH enjoys. The pics of my veggies are in my profile. Take a peek.:smile:

    @ Arf and Chris--you guys make me feel short, I've always been self conscience because at 5'10" I was always the tallest girl in school.

    @VT-hey, Girl, have you worn out the soles of those walking shoes, yet?? Great Job!!

    My fam has asked for homemade beef and noodles because of the extremely cold weather, so I'm caving and making it for them. I'm having 3 oz of sliced round steak w/ 1 cup sliced mushrooms that I sauteed in beef broth. Not as good, but better for me. I figure if I add some asparagus on the side it'll make a good dinner.

    I try to make substitutes for things for myself, being the only one in the fam w/ a wt problem--my daughter was eating potato chips today, so I grabbed some celery sticks and a wedge of light luaghing cow like cheese and it was great and took away my crunchie craving!

    @VT...lol no I NEVER slow down!!! LOL I am always running and going! LOL But, I wouldn't have it anyother way...and either would my family! They still tease me because if I have too much time on my hands...I alphabetize the kitchen cabinets and give my poor dymo labler a workout! LOL

    I'm a huge Feta lover...my fav..athenos reduced fat tomato basil! it's just delicious! If you aren't a feta fan..give that one a try!

    It's all good...we have a new dentist now! We have an appointment for both boys on Tuesday. After today I'll gladly give my $1700 (cost of my sons dental work) to someone else!

    Well, I'll need ya'lls support when I want to die starting Monday! I'm gonna do C25k Mon, Wed and Fridays and Boot camp Tues, thurs and sats!

    Yah'll have an awesome evening and yummy healthy dinners..while I'm dying at boot camp!!!

    I haven't met a cheese I didn't like. I love putting Feta or Bluecheese inside my burger mix before grilling them. Then I put them on top of my salad the next day. I can't wait until summer. I think this year I will be using turkey burgers.

    Arf on the C25K, You can do it. I have never ever run and I am on week 4. The first day of each week is the hardest. If you push yourself through it the second day gets better and the third you feel like you got it. Then they kick it up a step. There are podcasts you can download if you want. they play music and an announcer comes on and tells you when to start and stop running. You just google them and you can find one.

    Making spagetti and meatballs for supper. Going to kick in a cup of broccoli in mine.

  • I have had a great day. However, went over on my calories today but back on the wagon tomorrow. How do you post a pic on the boards? I have never had any luck with that. I want to post some when I lose more weight but I wanted to post one of my haircut, I tried it but it did not work.

    Wow, Chris and arf, I do feel short. I am only 5'1 1/2" and I hate being short. Gain just a little weight and it shows right up. VT, you inspire me with your garden. I so want to grow a garden.

    Lilac - No sole wearing out yet, lol! Shoe shopping is absolute torture for me. My whole entire life I had super high arches and had to modify most of my shoes in some form or fashion with supports or pads. Then I found Keds in my 30's. The heavier kind, not a full sneaker but not the lighter lace up ones either. Kind of in between. For some reason, they fit me perfectly. It was the only shoe I would wear for years and years and then they started to become harder to find. I found a whole slew of them at Sam's Club one day and bought 10 pair and kept them in my closet. Then I bought this house and gutted it on my own. Eight months of standing on bare Terrazzo floors, no foot support and quite a bit of added weight really did a number on my feet. Now my arches are falling and I have wicked bad foot pain most days. So, a couple years ago I found a pair of Saucony's I liked and bought two pair. Pulled the new one out of the closet when I started walking this year. A couple weeks ago I found another sneaker that fit me really well, New Balance, and bought two pair of those. So I now have a new pair on my feet, one in the closet plus the Saucony's which are back in the closet. I've got a few soles to go through! And yes, I still have a few pair of Keds tucked in to the back corner.:laugh: :laugh: :laugh:

    Arf - My Orginazational Sistah from Anotha Mistah!! I am the laughing stock of my family!! I drive my family absolutely NUTS with my organization. Even though it's just me and DH in the house whenever family members come to visit it's always a big joke to go mess something up and see how long it takes me to find it (which is almost immediately I'm embarrassed to say). I don't have a label maker but have a huge pantry and all the labels MUST be facing forward. I take a Sharpie to every single item and date them with expiration dates. If it's a shiny/slick label that the Sharpie won't adhere to it gets a piece of Blue Painter's Tape with the date and I rotate everything after every shopping trip. I kid you not! My fridge is the same way and I know when there is an *empty spot* exactly what goes there! I was so bad at one point I used to even rotate our Toilet Paper! :embarassed: I still kind of do, but don't admit to it, at least not in proper company, LOL!!

    Nothing much exciting going on here. It's leftover night. Nothing left but a piece of chicken and a bit of salad from last night that DH will eat and I made some Black Bean Dip/Spread for lunch today that I'm going to have. Getting ready to post the pics to my blog and sign off.

    R2L - to post pics on the board you need to upload your pics to Photobucket or something similar. It's free and you can upload a ton of pics but I have a Premium Membership with unlimited space because of all my cooking photos. Since it's the one I use I can give you directions for it, even though I had a wicked time last night. Problems on Photbuckets end is all I can think of.

    Sign up, upload your photos. When you scroll your mouse over the picture a drop down box will appear. I think there's 4 choices...Direct Link, HTML, XXXX????, and IMG. You want the IMG code. If you click it, it will automatically copy. Then come here and paste the link, but, you have to modify it a bit. The code will look something like this blahblahblah....See those two "IMG's"? You need to change them both from Upper Case to Lower Case. Leave the forward slash at the one on the end. Easy, Peasy.

    Can't wait to see your new hair cut!!
