    Lunch today:

    Wild rice salad with rocket, spinach and watercress, vegan VegiDeli Slices, Tivall vegan slicing sausage, and a drizzle of balsamic dressing. Total cals - 528

    ETA: Yes the meat replacers are processed but they're actually not too bad, containing mostly natural ingredients (and they *are* yummy!).

    shrimp 4.25 oz cooked
    celery raw 50g
    coleslaw mix, raw 85g
    Chili Garlic Sauce 1tsp
    artichoke, large

    223 calories, 28g carbs, 0 fat, 31g protein, 8g sugar, 14g fiber

    For lunch:
    remove artichoke, add avocado 47g
    223 calories, 15 carbs, 7g fat, 27g protein, 7g sugar, 9g fiber

    Slow cooked vegetable chili (vegan) with chopped apricot. It doesn't look like much but it sure sticks to my ribs! For a heartier meal, add any of the following: cornbread, avocado, greens, corn on the cob, baked potato.
