This is a variation of my standard black bean burrito. It has a few spicy shrimp with the juices it was cooked in, some shredded cabbage, and spring mix / baby spinach. Sorry it doesn't exactly match the recipe below.

    Black Bean Burrito

Here's the recipe - makes approximately 7 servings, at 208 cals per serving.

Great Value - Canned Black Beans, 2 container (1 4/5 cups ea.) 770
Peppers - Sweet, green, raw, 1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) 33
    Onions - Raw, 0.5 cup, sliced 24
    Oil - Olive, 1 tablespoon 119
    Spices - Chili powder, 1 tbsp 24
    Spices - Garlic powder, 0.25 tsp 2
    Spices - Onion powder, 0.25 tsp 2
Mccormick Crushed Red Pepper Flakes - Crushed Red Pepper Flakes, 1/4 tsp(.8g) 0
Spices - Oregano, dried, 0.25 tsp, leaves 1
    Spices - Paprika, 0.5 tsp 3
    Spices - Ground Cumin, 1.5 tsp 14
    Morton - Sea Salt, 1 teaspoon 0
    Spices - Pepper, black, 1 tsp 5
Light Sour Cream - Daisy, 2 Tbsp 40
Alfalfa seeds - Sprouted, raw, 0.25 cup 2
    Generic - Tomato Diced, 0.11 cup 4
Lucerne - Monterey Jack Cheese Shredded, 1/8 cup 60
    Rosarita - Salsa Verde (Medium), 1 Tbsp (30g) 5
La Tortilla Factory - Smart & Delicious High Fiber-Low Carb Garlic & Herb Whole Wheat, 7 Tortilla 350

    Total: 1458
    Per Serving: 208

Nice! And the pepperocini is a plus. You can usually find something spicy in almost everything I cook! A great addition to the salad.

Thanks for posting. Keep 'em coming...I need some new ideas to shake me out of a rut.
