It's hard for me to take pictures of my food because I just want to eat it straight away. Here's one picture I managed to take though.
Lunch:
- vegan mousse made from tofu + cocoa powder + a dash of splenda. used to top my sandwich… and nom separately

Simple, tasty salad: 223 calories

This is a variation of my standard black bean burrito. It has a few spicy shrimp with the juices it was cooked in, some shredded cabbage, and spring mix / baby spinach. Sorry it doesn't exactly match the recipe below.
Black Bean Burrito
Here's the recipe - makes approximately 7 servings, at 208 cals per serving.

Nice! And the pepperocini is a plus. You can usually find something spicy in almost everything I cook! A great addition to the salad.
