Goin Green Challenge Week 2 of Challenges
This weeks challenge is really about us each thinking more on eating our greens....just like last week was focusing on keeping our water up, if we didn't normally drink water, then hopefully last week changed all that and made us much more conscience of the importance of it.:drinker:
This week, same things....some folks don't eat ANYTHING green in their daily foods....so think of this challenge as paying more attention to what your choices are and what various green veggies & fruits can do for our bodies.
If for some reason a day comes and you forgot your greens or gag at greens....just google something that talks about the importance of greens for our bodies. Simple? Oh Yeaaaaa.....just share what you found on here and there ya be!
So eat your greens or look up your greens & share .....either way we learn, but perhaps the better goal is to increase our attention to just how much or little of the green family of foods we eat:drinker:
Greens are VERY VERY important to the health of our bodies....if you have a tough time with anything but iceburg (is that a real food?:noway: ) stretch out a bit and try some darker greens....really you'll be amazed if you haven't tried them before. The energy punch is powerful!:drinker:0 -
Hey All! I had green today too!! A Ceaser Salad for lunch and green beans with dinner!! I LOVE GREEN BEANS. But I am steering CLEAR of those Lima Beans..........
Okay lil sis. I did not see lima beans on the list and if it's not on the list, then I'm not eatin' them (that's my excuse. ) :laugh:YAY got your greens in for the day:flowerforyou: ah Yea....I think we're all steering clear of the lima been truck...

Chinese Green Bean Salad
4 Servings
This bright green, crunchy salad is bursting with Asian flavors and is so easy to prepare. Look for fresh, plump organic green beans if you can find them. Cook them until they are bright green and still crunchy-tender. At this point you can keep the green beans refrigerated. Toss them with the dressing just before serving or the acid in the dressing will dull the bright green color. Ginger root, one of the main flavors in this salad, is actually a rhizome, an underground stem of a tropical plant, Zingiber officinale, which is well known for its anti-inflammatory properties and as a treatment for nausea. You can use ginger in many forms and reap its benefits.
Ingredients:
1 pound fresh green beans, organic if possible
1 tablespoon finely chopped fresh ginger root
1 cup slivered red onion
Dressing:
4 teaspoons dry mustard powder
1 tablespoon cold water
2 tablespoons reduced-sodium soy sauce
3 tablespoons rice or cider vinegar
2 teaspoons dark-roasted sesame oil
Instructions:
1. Trim and cut the green beans into 1-inch lengths. Cook in rapidly boiling water, about 5 minutes or until crunchy-tender.
2. Drain beans, immerse in cold water to stop the cooking until they are cool, then drain well.
3. Mix the dressing ingredients in a small bowl with a whisk until well blended.
4. Toss the green beans with the ginger root, red onion and dressing. Serve immediately.

I had spinach tonight with dinner. But no lima beans. Hey instead of Key Lime Yorgurt what about the real Key Lime Pie, or you could have pistachio pudding. It's green. Hehehe.0

Peas are not my favorite either. But as a kid I learned (and yes, I know this is not good) to swallow them whole. My dad would make us eat them ('member that lil sis?) anyway. Now days I may give them one squish of the tongue and then swallow it down. Now if they're in a casserole, then I don't mind them at all. Strange how I eat some foods.0

I can remember Peas and Liver at supper and I'd put so much salt on the liver that's all you could taste and I too would swallow the peas whole. Finally my parents allowed me Spaghetti O's on liver night! Whew! Guess they figured the salt was totally defeating the purpose.0 -
EEEWWWW liver - my mother use to make me eat it - which I think is were my over eating started! I had to have this huge pile of potatoes and gravy (chicken gravy) I would hide the liver in the potatoes - but you could still taste it! :sick: :sick: :sick:0

lettuce, spinach, apples, cucumbers, kiwifruit, peas, avocados, grapes.... hey i think thats like one a day right there plus one for a snack :bigsmile:

I have not abandonned you I am still here I had no computer accesss and i worked this weekend.
I did however eat lots of greens this weekend on saturday I had pepper steak green peppers (bell peppers) Sunday I had pot roast with lots of veggies (green beans) monday I had lettace and brocclli so I have been keeping up and not even knowing it :laugh: I try to eat greens everyday so this will be a really easy challange

okay i geuss its cause i come from a long line of true southern women , cause i like lime beans with lots of butter and little salt and i love peas cooked slow in a lillte sugar and butter and and i like fried chicken liver and gizzards. :laugh:0

Okay you are not weird just a little southern:happy: Hey I am southern and I can remember my Grandma making us eat that stuff at dinner and I hated it but we ate that or nothing so i ate it :sick: and hated it so I have not touched liver lima beans chicken gizzards or chicken livers. :sick: :sick: :sick:

EASE OF PREPARATION: Easy
1/4 cup all-purpose flour
2 large egg whites, lightly beaten
1/4 cup cornmeal
1/4 cup whole-wheat flour
1/4 cup plus 1 tablespoon cornstarch, divided
1 teaspoon paprika
1 pound cube steak, cut into 4 portions
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground pepper
2 tablespoons canola oil, divided
1 14-ounce can reduced-sodium beef broth
1 tablespoon water
1/4 cup half-and-half
1. Preheat oven to 350°F. Coat a baking sheet with cooking spray.
2. Place all-purpose flour on a large plate. Place egg whites in a shallow dish. Whisk cornmeal, whole-wheat flour, 1/4 cup cornstarch and paprika in another shallow dish. Season both sides of steak with 1/2 teaspoon each salt and pepper. Dredge the steak in the flour, shaking off excess; dip in the egg whites, then dredge in the cornmeal mixture.
3. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Reduce heat to medium and add 2 pieces of the steak; cook until browned on both sides, turning once, 3 to 5 minutes total. Transfer the steak to the prepared baking sheet and repeat with the remaining 1 tablespoon oil and 2 pieces of steak. Transfer the baking sheet to the oven and bake until cooked through, about 10 minutes.
4. Meanwhile, add broth to the pan and boil over medium-high heat, stirring occasionally, until reduced to about 1 cup, 3 to 5 minutes. Whisk water and the remaining 1 tablespoon cornstarch until smooth. Remove the pan from the heat and stir in the cornstarch mixture. Return to the heat and cook, stirring, until thickened, 1 to 2 minutes. Stir in half-and-half; season with the remaining 1/4 teaspoon salt and pepper. Serve the steak topped with the gravy.
