    It deflated in the fridge again!? Why? What am I doing wrong baking experts?

    Cooked. Done. Turn oven off and let sit in oven for over 2 hours until room temp. Then move to fridge overnight.

    By the morning had lost half it's height. Still tasted awesome though.

    I made half the recipe using Neufchatel cheese, skim milk, a tiny bit of grahamcracker crumbs on bottom and a cup of frozen blackberries mixed in, as cupcakes. Sixteen crazy yummy cupcakes at 113 calories each.

    Bump! I always use fat-free cream cheese and Splenda to make cheesecake, and it turns out awesome - this sounds like another recipe I'll definitely have to try :-)

    Oh, and whoever suggested making this into cupcakes - brilliant!!

    Made another variation on the weekend. Choc/pumpkin.

    Ingredients:
    500g low fat cream cheese
    1 whole large eggs
    3 egg whites
    4 oz (1/2 cup) low carb no fat milk
    2 scoops (60g) whey protein
    1 tbsn cocoa
    250g pumpkin boiled and mashed
    1 tspn baking powder

    cut into 12
    81 cals, (4/3/12 C/F/P)

    Was too chocolatey for me & couldn't taste the pumpkin.


    & version 2 more pumpkin, less chocolate

    500g low fat cream cheese
    500g pumpkin boiled and mashed
    1 whole large eggs
    3 egg whites
    4 oz (1/2 cup) low carb no fat milk
    1 scoops (30g) whey protein
    1/2 tbsn cocoa
    1 tspn baking powder

    Cut into 12
    73 cals, (4/2/9 C/F/P)

    I didn't take pics of the first one as I ate the whole lot in one go :happy:
    And second one I forgot to put the baking powder in so it never rose so it is more of a slice. Oh well, still tastes damn good.

    Pretty sure I would just eat more cupcakes :laugh:

    That's the beauty of this recipe. Half of the cheesecake has similar calories to one slice of regular cheesecake (and about a million more grams of protein :tongue: )
