    this is my senior moment question :blushing: does the rice have to be cooked prior to adding it to the crock pot??

    I'm also wondering, do you cook the rice before? Can you use Brown Rice for a higher fiber version?

    Quinoa can be substituted for the rice. i don't know that this helps to save any on calories, but it does increase the protein and is just nice for something different.

    I prefer mine with brown rice. And I don't cook it before I make it, but that's because I cheat and use minute rice :blushing:

    5 trimmed chicken breast
    lay in the bottom of crock pot
    1 pack of dry italian seasoning dressing - (I use 2 because I like the stronger season taste)
    chicken stock - pour over the chicken/seasoning, just barely covering it
    Cook on low for 5 hours
    then shread the chicken in the crockpot
    1 can of low sodium cream of chicken soup and 1 block of fat free cream cheese
    blend the soup and cream cheese with a mixer (get all the clumps out)
    Mix the cream cheese/soup blend into the crock pot, stir well
    Cook for another hour
    Serve over rice or whole wheat pasta

    1 cup long grain white rice
    1 can low sodium cream of chicken
    16 oz frozen broccoli
    1 cup fat free shredded cheddar cheese
    1/4 cup fat free milk
    3 cups water

    combine all ingredients into crock pot. cook on high 3-4 hrs.

    serving size 1- 1 1/2 cups cooked.

    Total Fat 4 g
    Potassium 0 mg
    Saturated 1 g
    Total Carbs 26 g
    Polyunsaturated 1 g
    Dietary Fiber 2 g
    Monounsaturated 1 g

    Use brown rice instead of white.
