    Macaroni & ground beef casserole
    1 can tomato soup
    1 soup can water (or can use milk - milk makes it extra creamy delicious!)
    1 medium onion chopped*
    ½ medium green pepper chopped*
    1 tsp. Salt
    ½ tsp. Sugar
    4 ounces Velveeta*
    8 ounces macaroni, cooked al dente
    1 # ground beef, cooked and drained
    *more or less to taste


    i made this last night since it was rainy and cold and we needed a tasty quick dish to help warm our bellies.

    i just want to share that after i browned all the meat, i rinsed it really well in a sieve to get off all the fat, then i didn't feel so bad using 2% milk instead of water, and you're right : creamy delicious!

    The sodium content is through the roof! IDk; I think I'll pass on this one. :laugh:

    This is very smart. Thanks for the tip! I can’t wait to make this. Unfortunately, I’m out of velveeta at the moment, since I use it in just about everything. Time to stock up!

    It's Mmmmm mmmmmm good and good for you! It has protein and veggies and cheese :bigsmile:

    Macaroni & ground beef casserole

    mix soup, water (or milk!!!), onion, green pepper, salt and pepper, in quart saucepan. Bring to simmer, stirring occasionally.

    Cut in Velveeta, stir until melted. Be careful, it can scorch!

    Layer some macaroni & beef, in 1 ½ quart casserole, pour a 3rd of the soup mix over repeat, ending with soup mixture…bake 350 degrees for a half hour.

    Great left overs, add a little extra soup…warm in sauce pan.

    Sorry but I'm going to tweak this, I'm using low salt soup, low fat milk and laughing cow light cheese portions. Cooking off the mince and rinsing the fat from it.

    Just made this got it down to about 275 cals per serve, serves 7 and I quote my kids "this is yummy, can I have more!" and to quote hubby "is this healthy too, it can't be it tastes good" Added 1/4 cup of parmesan over the top popped the lid on the casserole and baked for half an hourish.

    I just did the calorie count on this. Even if you split it five ways, it's still well over 500.
    Unfortuantely, as tastey as this looks, this is not going in the "ones to try" book. :(

    No. We're very limited with the processed cheeses that are available. It is mostly real cheese that is available.

    275 calories for me......is velveeta less caloric in Canada?
