    I make bruschetta quinoa by just cooking it according to the package and letting it cool. Then I add chopped tomato, red onion, basil and crushed garlic. Then I drizzle a little olive oil and balsamic vinegar on top and toss. It's sooo good in the summer and the best part is if you have left overs they taste even better the next day!

    Even my kids eat it when I make it like that - except they call it "king-kong" instead of "keen-wah" - kind of funny!

    I roast diced sweet potato with a little olive oil and salt and pepper. Then at the end of the roasting I add in some spinach with olive oil and roast that a litte.

    Then I boil up the quinoa per package and mix that with all of the sweet potato and spinach and then add in some goat cheese and put it all on top of a roasted portabello mushroom :) SO GOOD
