    Cheesey Chicken Spagetti

    Ingredients
    16 oz dry whole wheat spaghetti, cooked & drained
    1 lb. velveeta 2% light cheese
    12.5 oz can chicken breast, drained
    1 can 98% fat free cream of mushroom soup, undiluted
    1 can 98% fat free cream of chicken soup, undiluted
    10 oz can diced tomatoes and green chilies (Ro-Tel)
    1/2 c water

    Optional:
    4 oz can mushroom stems and pieces, drained
    1 small onion, diced
    1 medium green pepper, diced
    salt & pepper, to taste

    Directions
    spray slow cooker with non-stick cooking spray

    combine all ingredients in slow cooker and stir well

    cook on LOW for 2-3 hours. stir again just before serving

    Number of Servings: 12

    Try this in your crock pot. Your guests will want the recipe so make sure to have extra copies of it laying around :happy:

    1 bag (3 pounds) of frozen boneless skinless chicken breasts (or fresh if you have it)
    3 cloves of minced garlic (I use the pre-minced in the jar)
    1/2 cup of tomato juice
    1/2 cup of low-sodium soy sauce
    1/2 cup of veggie or canola oil (I've also tried it with apple juice in place of oil and it was still tasty without all the fat)
    1/2 cup of packed brown sugar

    Place chicken in large crock pot. Mix other ingredients and pour over chicken. Cover and cook on LOW for 6-8 hours (or HIGH for 3-4 hours if short on time)

    It will be so tender that it falls apart when you try to plate it.

    After cooked, I use a soup ladle and get some of the juice out. I use it as my liquid to make brown rice. SOOOOO GOOD!!!

    Here is a recipe I have for "salsa chicken" and my family absolutely :heart: it.....


    Salsa Chicken

    4 boneless skinless chicken breasts
    1 cup salsa
    1 package reduced (low) sodium taco seasoning
    1 can reduced fat cream of mushroom soup (condensed)
    1/2 cup reduced fat sour cream

    Place chicken in slow cooker. Sprinkle it with taco seasoning, then pour salsa and soup over the chicken.
    Turn heat to low and cook 6-8 hours. Remove from heat and stir in sour cream. Serve over rice. (rice not included in nutritional info below)
    Makes 4 servings

    Per serving:
    calories 160
    total fat 5 grams
    saturated fat 3 grams
    cholesterol 54 milligrams
    sodium 537 milligrams
    carbohydrates 9 grams
    dietary fiber 1 gram
    protein 18 grams

    I have recently discovered it, too. What I have learned is that I can only afford to use it about once a week, and barely even that. Hot dogs and burgers are cheaper, go figure.

    Cook on low 6 hours....chicken falls right off the bones....super simple and delicious.

    Italian Chicken

    1 bag FROZEN b/s chicken breasts
    1-2 envelopes dry Italian Dressing Mix (I use 2)
    1 bottle or can beer
    Pepproncini peppers to taste (I use 2-4 so my kids will eat it)

    Cook on low for 7-8 hours. Serve with or without a bun.
    We eat it without the bun with a slice of provelone cheese.
    YUMMY!!
    I make something very similar with 1 pkg Italian Dressing mix & 1 pkg onion soup mix, but I've never tried beer in it. I think I will next time!

    Crockpot Creamy Taco Soup

    Mix this lean muscle-building recipe into your menu a couple times a week and you should be on your way to reaching your goals in no time!

    (SERVES 7)
    3/4 cup nonfat Greek yogurt
    1 15-oz can 50% less sodium white beans, rinsed and drained
    1 15-oz can black beans, rinsed and drained
    1 4-oz can diced green chills
    1 15-oz can diced tomatoes

    1 cup reduced-sodium chicken broth
    1 cup frozen or fresh corn
    1 1/2 pounds shredded precooked chicken breast

    2 tbsp fresh squeezed lime
    1 clove garlic, minced
    1/2 tsp onion powder
    1 tbsp fresh oregano, chopped
    1/2 tsp smoked paprika
    1 tsp chili powder
    1 tsp cumin
    1 tbsp dried cilantro
    2 tsp Mrs. Dash Fiesta Lime Seasoning Blend

    1/ Place 1/2 cup broth and white beans in a blender and puree. Add yogurt and blend again. Pour liquid into slow cooker.

    2/ Add remaining ingredients and stir well.

    3/ Cover and cook on high for 2 hours or on low for 4-5 hours.

    Note: Be sure to rinse and drain black beans and chicken well before adding to slow cooker.

    Nutrition Facts (per serving): Calories 275, Fat 2 g, Saturated fat 1 g, Cholesterol 47 mg, Sodium 401 mg, Carbohydrates 36 g, Dietary Fiber 11 g, Sugars 7 g, Protein 32 g

    I don't typically "bump" but I am on this thread. I have been trying to get my family to eat better, but neither my husband or myself has the time to cook! I think this will seriously help some of our problems.!!! I'm also excited about the crock pot liners!! :p
    Right there with ya!! It is a full time battle trying to get my kids to eat healthy!! I am pretty excited about the crock pot liners also.. Must check that out!!!

    One of my favorite crock pot recipes is for either pork or chicken.

    4-6 large chicken breasts trimmed of all fat ( or 4-5 large pork chops trimmed of all fat
    8-10 tomatillos, dry skin removed, washed and quartered
    1 large onion cut in one inch chunks
    2 cans red, black or kidney beans, sometimes I use a canned trio of beans
    6 green chilies, roasted, peeled, seeded, chopped
    2 large tomatoes peeled and seeded. chopped
    2 cups corn
    4-6 cloves garlic, sliced very thin
    1 tsp salt (more depending on your taste)
    Cumin, Chili powder, and italian seasoning to taste
    cook on low 7 hours, remove meat, shred, return to pot
    add white or brown instant rice 30 minutes before serving. I use one package uncle bens boil in bag rice, sometimes I stretch it with 2 bags

    The leftovers from this make a great stuffing for stuffed peppers, especially red peppers! i just add an ounce of cheese in every pepper.

    Occasionally this produces a very bland mix so I will give in and add a chili verde sauce to it after 4 or 5 hours... you never can tell about the fresh tomatillos and chili's!
