    as i am a vegetarian i dont use eggs
    would it be ok to use a banana as a binding agent?

    Applesauce or banana work to replace both eggs and oil. You can also use flax seeds mixed with some water to replace egg. I do this alot with muffins. If the consistency is not right on the batter, add a little bit of water to thin it out if needed. Actually when making anything chocolate, I add a little cold coffee to intensify the chocolate flavor.

    I wanna try this in several of the alterations....anyone try making the "brown sugar" with the molasses and Truvia? that would be lover cals than the sugar but how does it taste?

    Im confused...what is replacing what...Is the applesauce replacing the eggs or the oil....and the bananas?

    I made these, they are DELICIOUS. I made the following changes though:

    ~ Instead of oil, I used 4 tbsp of canned pumpkin (makes them moist, less sugar than apple sauce, and you can't taste the difference, I swear) = saves 350 calories from the batch

    ~ I only used 1/4 cup brown sugar = saves 120 calories

    ~ I added 2 tbsp dark chocolate chips = adds 140 calories

    Also, I baked them in cupcake tins. Made 8 cupcakes for only 75 calories each!

    These sound lovely!! I have all the ingredients but being in the UK we don't measure in 'cups' and I have no idea how much of everything to use!

    Can someone convert this recipie into grams for all us UK'ers!
