I didn't read the whole thread to see if anyone else already posted this...
I make muffin pan fritattas and I think they are awesome.
in a frying pan, make a mixture of any low cal meat or veg you like..
turkey bacon
veggie sausage
lean ham cubes
asparagus
mushrooms
onions
spinach
etc
chop it all up, then use a tea spoon of oil or some cooking spray and saute it all togher so the veggies are wilted and flavors mix. season with pepper, mrs. dash or spices you like.
spray a muffin pan with non stick spray, put a spoonfull of the mix in each cup and fill 3/4 of the way with egg whites. ( I just get egg whites premade in a carton)
bake at 350 till the eggs are full cooked/slightly brown on top. 10 - 15 minutes depending on the size of the muffin cups.
each 'muffin' is 40 - 100 calories depending on what you put in them.
put them in the fridge and have 2 - 4 for breakfast every morning, cold or heated up in the microwave.0 -
spinich/onion/pepper eggwhites omelette about a 1/3 of a cup fresh fruit or a slice of gluten wheat free bread. Or turkey bacon 2 slices.
I also have greek yogurt & fruit
