    This morning I put one small chopped onion and 2 cloves of garlic in the bottom, topped that with 2 large chicken breasts, then added a drained can of whole tomatoes (no salt added, and reserve the juice). Then mix some cumin and cayenne with the reserved tomato juice and pour on top. Been cooking on low all day, and I'll add salt to taste before serving. It's based on an epicurious recipe that I usually make (not in the crock pot), but doing it this way allows me to leave out the butter/oil, and I have high hopes that it will be delicious!

    Will shred it then the bf will use it for normal tacos, I'll make tacos using romaine hearts instead of tortillas, like boats. Always top with cilantro.

    Crockpot Cranberry Chicken

    Frozen chicken breasts
    1 can cranberry jelly
    1/2 bottle light Catalina dressing
    1pkg onion soup mix

    Put all in the crockpot and cook on low for 8 hrs.

    My family loves this!

    I put this together the other night. It was easy to make. The chicken turned a crazy orange color from the dressing tho.
    I also used Whole Berry Cranberry in a can.

    If anyone else has any cran recipes I'd love to see them!

    This is what I'm making tonight.


    8 de-boned chicken breasts
    1 pkg. dry onion soup mix
    1 (8 oz.) jar apricot preserves
    1 (8 oz.) bottle Thousand Island dressing (I used FF)

    Put all ingredients in crock pot. Cook on low setting for 6 hours. Serve on rice or rice with peas.

    I tend to just experiment with different combinations of chicken, vegetables, and spices. Don't often follow a recipe. However, I've tried a few from skinnymsslowcooker.com that turned out well.

    I love to put a jar of salsa and chicken breast in the crock pot! So delicious! I add in cream cheese at the end to make it even better, but you could skip that to make it lower cal.

    skinnytaste.com has an awesome recipe that can be done in the crockpot. It is called pollo en potacchio. One of my faves!

    Sm. Light herb and garlic cream cheese
    I can't remember how many tablespoons of curry but lets say 3 :)

    Serve over rice or with salad.

    1 bottle franks buffalo sauce
    1 hidden valley ranch dip mix

    cook on low heat for eight hours.
    put in tortillas or pita pockets

    I make this all the time, and franks has NO calories.... :D
