    STUFFED SHELLS

    1pkg. (10 oz.) frozen chopped spinach, thawed, well drained (I used 2 cups fresh baby spinach)
    1container (16 oz.) Fat Free Cottage Cheese
    1red pepper, chopped (I omitted on accident, still good)
    1egg white
    1env. (0.7 oz.) Italian Dressing Mix
    1cup Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
    20 jumbo pasta shells (for stuffing), cooked, drained and cooled
    1jar (13-1/2 oz.) spaghetti sauce

    HEAT oven to 400°F.

    COMBINE first 5 ingredients in medium bowl. Stir in 1/2 cup mozzarella; spoon into shells.

    SPREAD half the sauce onto bottom of 13x9-inch baking dish. Place shells in dish; top with remaining sauce and mozzarella. Cover.

    BAKE 40 min. or until heated through, uncovering after 30 min.

    This was SO super yummy. The cottage cheese takes the place of what would traditionally be ricotta, because cottage cheese is far fewer calories and salt, but similar in texture. I'm not a huge fan of the stuff, but these were divine! Only 340 calories, 7g fat!!!

    I use it as a side to my Cooking Light Turkey Chili or a serving of pasta with a tomato sauce. .

    I eat with black pepper and also canned peaches fresh pinneapple and lately fresh strawberries.

    w/ mandarin oranges and cinnamon

    w/ tomato, cucumber and red onion and italian seasoning

    dice up veggies, mix with seasoning- put on top of small portebello mushroom cover with shredded cheese and bake :o) yummy giant stuffed mushroom meal :o)

    i saw something on pinterest.....chop up some cucumber, green onion, green peppers, mix it with cottage cheese, and put it inside a tomato. It looked amazing!!

    I like to eat it these ways:
    with chopped tomato & avocado with black pepper;
    with a bit of fruit like peaches or pineapple;
    mix with salsa, put on a whole wheat tortilla pop in microwave until it gets melty - cottage cheese quesadilla;
    grill chicken breast with balsamic vinaigrette and onions, slice and put on top of cottage cheese with avocado chunks;
    on toasted 100 calorie bread with a slice of tomato and black pepper;
    with couscous, sun-dried tomato, cucumbers, fresh tomato and a touch of oil & vinegar;
    in a whole wheat tortilla sprinkled with cinnamon and heated in microwave (I know it sounds weird but it's delicious);
    fill celery stalks with cottage cheese, top with cucumber slices

    Rinse it off, run it thru a food processor and use it as a substitute for cream cheese.

    I put chopped lettuce in bowl , then the cottage cheese, and top with either pineapple tidbits or lite drained fruit cocktail.

    I like a couple tablespoons on a salad because it adds a creamy element (and is healthier than creamy dressing) or mixed with melon or berries.

    Cottage cheese freaks me out (especially when its on my bum and things :laugh: ) but I am interested in incorporating it into my foods.

    I somtimes use it in place of butter,

    Its nice on crackers or rice cakes with a slice of tomatoe or gerkin or chives

    also like to make vegybake layerd partly boiled veg , cottage cheese in between can put Lasagne sheets in it to0
    and make a low fat white sauce pour it over and bake.or just put some Light cream instead of white sauce.

    nice as a dolop on top of pumpkin soup or french oinon soup too

    I do a tip I found on here awhile ago, put it on toast with pineapple, cinnamon and brown sugar, and put under the grill (I think americans call it the broiler?) until bubbling. For a savoury version I do the same with tomato, salt, pepper and basil.

    On toast w pepper and fresh slices of tomato. Makes for a nice sandwich actually--but don't pack it in your lunch that way, it will soggy up the bread. Wait until you are ready to eat it.
    I also LOVE cottage cheese with a little bit of yogurt. Adds texture, protein, and makes for lower sugar snack.
    Amazing w a dallop on sliced cucumbers drizzled w Catalina or French dressing.

    I'm getting some great ideas from this thread, cottage cheese is a staple in my diet since it's low-cal and high in protein. here's the ways I eat it:

    Mixed with crushed fire roasted tomato Triscuits(soooo good, it reminds me of pizza, I think everyone should try this)

    Sliced tomato and/or cucumber with salt and pepper

    Mixed with trail mix, (usually Ann's house brand-Almonds, Cranberries, Sunflower seeds, soy nuts)
