    I didn't take the time to read all this yet... but my two favorites are pumpkin pie protein shakes and pumpkin pie oatmeal. YUM!!

    Protein shake:

    1/2 cottage cheese
    1 scoop vanilla protein powder
    1/3 c milk
    1/2 c pumpkin puree
    1/2 tsp vanilla extract
    2-3 tsp stevia in the raw cup for cup (more or less depending on your sweetness desire)
    1 tsp pumpkin pie spice and/or cinnamon-depending on personal preference
    1/2 tsp xanthan gum
    ice cubes

    crushed up 100 calorie pack of lorna doone cookies

    Blend all but the cookies until smooth. mix in the cookies after. Delicious!


    Pumpkin pie oatmeal:

    1/2 c pumpkin puree
    1/2 c old fashioned oats
    1 tsp pumpkin pie spice and/or cinnamon
    1 1/2 c milk of choice
    1 tsp vanilla extract
    2-3 tsp stevia in the raw cup for cup
    1-2 TBSP raw almonds, crushed (optional, but I love them!)

    Bring all but almonds to a boil, reduce heat, and simmer for about 10 minutes. Remove from heat and mix in almonds.

    YUM!

    Pumpkin Pie Fridge Oats:
    1/4 C rolled oats (not quick!)
    1 TBSP pumpkin seeds
    1/4 C unsweetened almond milk
    1 TBSP chia seeds
    1 TBSP plain greek yogurt
    1/4 C canned pumpkin
    1 tsp pumpkin pie spice
    1 TBSP maple butter (or maple syrup, honey, sugar etc)

    mix together, refridgerate, devour in the morning.

    Crust - bake at 350 for 8 - 10 minutes
    Land O Lakes - Light Butter With Canola Oil, 3 Tbsp(14g) 150 0 15 0 0 270
    Generic - Best Choice Low Fat Cinnamon Graham Crackers, 9 whole crackers 390 87 3 6 3 420

    Filling
    Libby's - 100% Pure Pumpkin (15 oz Can),
    Pet - Fat Free Evaporated Milk, 1 container
    1 egg
    2 Egg Whites
    1/2 cup Splenda - Sugar Blend
    Bake according to directions on Pumpkin can

    1/6 of the pie is 262 calories

    Roasted with other veggies, garlic then cracked corriander seeds and goats cheese. Divine.

    I make 2 loaves of banana bread that normally call for 6 ripe bananas but instead use 3 and for the rest I use pumpkin. It's really moist so it's hard to judge when it's done baking but oh is it good!

    Vegan pumpkin chili! I'm also dying to make a pumpkin pie as well as my apple pie this weekend. Want to see if I can make it healthier or something, I figure anything is better from scratch than frozen since I will not be adding a bunch of crap!

    Super Moist Low Fat chocolate cupcakes

    18.25 oz duncan hines dark chocolate fudge cake mix
    1.4 oz sugar free, fat free, instant chocolate pudding
    1 cup canned pumpkin (not pumpkin pie filling)
    1 1/3 cups water

    Preheat oven to 350
    Line a cupcake tin with cupcake liners
    Combine pumkin puree and water in a large bowl, mix to combine. Add chocolate pudding mix and mix well
    Add chocolate cake mix and beat 2 minutes

    Fill cupcake liners 2/3 full and bake about 25-28 minutes

    Makes 24 cupcakes

    Calories 93.8 per cupcake
