    I've never tried pumpkin before. They don't sell canned pumpkin in the supermarkets in the UK for some reason. Just found a website that sells it so will order some. Can't wait to try some of these recipes :)

  • My wife makes a spicy pumpkin soup similar to this and it's great. It's filling and a great side dish or snack. It's only 69 calories per serving and it keeps me warm in the winter months.

    Pumpkin Pie Tarts!
    Or as we like to call it in my house, "Pumpkin Pasties!"

    A can of pumpkin, cinnamon, nutmeg, and cloves are what make it so delicious.
    Then just find a semi low calorie pie crust, and make them much smaller, say about 2-3 inches in diameter, and put a dollop of the pumpkin mix in, and bake!

    I don't think they're too bad in calories, I'll come up with the math when we make them again though

    Method: Either eat the pumpkin & discard the crust or baked in a water bath so it doesn't burn.

    No whipped cream for me.

    One good garnish baked internally is pecans.

    Roasted with other veggies, garlic then cracked corriander seeds and goats cheese. Divine.

    Ohmygawwwd that made my mouth start watering. This is going to be dinner sometime soon.

    A lady at work brought this in for Thanksgiving one year and I hounded her for two weeks until she gave me the recipe.

    Pumpkin Crumble

    1 can (15 oz.) pumpkin
    1 can (12oz) evaporated milk (lowfat is cool)
    1 c. sugar
    2 eggs
    4 tsp. allspice or pumpkin pie spice
    4 tsp. cinnamon
    1 pkg. yellow cake mix
    1 c. melted butter
    1/2 c. chopped pecans or more if you like, cover the top

    Combine pumpkin, milk, sugar, eggs, spices; mix well.
    Pour into greased 9"x13" cake pan.
    Sprinkle with dry cake mix.
    Sprinkle with pecans.
    Drizzle melted butter throughout top along with a little cinnamon.
    Bake at 350 degrees for 40-50 minutes or until golden brown or if a knife comes out clean it's done.

    Whipped cream would be a great addition.

    ok tried this today

    box of french vanilla cake mix and a 15oz can of pumpkin bake cupcakes at 350 degrees for 20 mins...these are super easy and lighter then a traditional cupcake. dip in ganache or ice with a little frosting. we did a cream cheese frosting with a little all spice and cinnamon...delicious!!

  • I eat this delicious recipe called "pumkin fluff" It has a whole tub of fat free cool whip, a sugar free vanilla instant pudding packet and a can of pumkin. It is yummy. It tastes like pumpkin pudding. :)

    This sounds amazing! Is the pudding vanilla? Small or large packet?

    put this in a grahm cracker crust and u got a no bake pumpkin pie!!!! i make it every year for thanksgiving yum yum...dont for get spices!!!
