I make pumpkin pie without the crust and call it "souffle" (it's also fat free and sugar free) My favorite way to eat pumpkin is cooked fresh or warmed from the can...hmmm0

In two weeks, pumpkin roll will be at one of the local craft festivals! I count down the days to pumpkin roll! When I get some, my diet will just have to go out the window for one day because I LOVE it! Pumpkin and cream cheese holiness!0

I eat these every couple of weeks!! Yummy and full of protein!
Pumpkin Protein Pancakes
Serves one (makes 3-4 medium-sized pancakes)
•Prep time: 5 minutes
•Cook time: 5 minutes
Ingredients:
•2/3 cup old fashioned oats
•1/4 cup cottage cheese
•1/4 cup canned pumpkin
•1 egg
•1 egg white
•1/2 teaspoon cinnamon
•1 tablespoon honey
Directions:
•Spray pan with cooking spray and heat to a medium heat
•Combine all ingredients in a small bowl and blend with an immersion blender until batter is relatively smooth and all ingredients are fully mixed
•Pour batter onto the warm pan to form three medium-sized pancakes
•Allow to cook until edges start to harden, about three minutes
•Flip pancakes and allow to cook until batter is no longer runny, about two more minutes
•Top with syrup, nutmeg or desired toppings and enjoy

Low-Fat Pumpkin Cheesecake...Num Num! I make this for Thanksgiving instead of pumpkin pie. I will also drizzle low fat caramel syrup over the slices when serving.

I just ate some, thanks to this thread!
Mixed in a bowl -
1 cup canned pure pumpkin,
2 packets splenda,
1 tsp pie spice,
a splash of 0-cal caramel extract.
Warmed for about 20 secs in the microwave, poured on 1/2 cup of cold, unsweetened almond milk.
55 calories total and it was AWESOME.0 -

pumpkin pie oatmeal!
Ingredients
1/2 cup old-fashioned oats
1/2 cup skim milk
1 ripe banana, sliced
2 dashes cinnamon
1/4 cup pureed canned pumpkin
1 dash ground cloves
1 dash ground nutmeg
Handful frozen blueberries (optional)
Directions
1. Put the oats, milk, sliced banana, and cinnamon into a small pot on the stove.
2. Stir continuously over medium high heat for about 5 minutes, or until the mixture gets thick and creamy (and starts bubbling). Stir in the frozen blueberries now, if you like.
3. Turn down heat to medium low and add the canned pumpkin and a dash each of ground cloves and ground nutmeg.
4. Serve hot and enjoy!
Ate this for breakfast this morning. Yummm. And I don't even like oatmeal!0 -
