    I eat this delicious recipe called "pumkin fluff" It has a whole tub of fat free cool whip, a sugar free vanilla instant pudding packet and a can of pumkin. It is yummy. It tastes like pumpkin pudding. :)

    yummm!! This is so good. I use this recipe too ..got it from a weight watchers meeting!

    I make a pumpkin pie protein shake...

    1 scoop vanilla protein powder
    1 cup milk (any kind)
    1/4 cup pumpkin puree
    1/4 cup lite cool whip (optional)
    1/8 tsp pumpkin pie spice
    6 ice cubes

    YUM!

    Oh yeah!! These are awesome!! And you can use this recipe as an alternate for a yummy breakfast smoothie:

    1 cup coffee, black
    1 scoop vanilla protein powder
    1 cup pumpkin pie mix (already has the spices included)
    6 oz Greek yogurt, plain
    1 tsp almond extract
    3 - 4 ice cubes

    314 cal
    33 g carbs
    3 g fat
    44 g protein

    This recipe actually makes more like 2 servings but I always end up drinking all of it!! Great post run meal!!

    Commenting so I can come back to these recipes later. I loved Sonic's pumpkin shake last year..pre MFP of course, there's no way I could justify having one now! :love:

    As we near fall and with the return of the pumpkin spice lattes I am craving anything pumpkin. Put down some of your favorite recipes or ideas for using pumpkin.

    My favorite is spice cake mix and a can of pumpkin, mix and bake as muffins. They are super moist and ooooooh so yummie.

    imma try pumpkin pancakes!
    gonna use the simple greek yogurt recipe I have for pancakes but use pumpkin instead !! should work the same!

    6oz greek yogurt (so will try pumpkin!!)
    2tbsp egg whites
    1/2 cup flour (Reg or wheat , i use reg)
    1tsp of baking powder
    stir and make like pancakes!!
    when doing em greek yog style i add banana or bluberries!
    but for pumpkin i may add nana... or mini c chips! :tongue:

    I like to mix canned pure pumpkin into my cottage cheese (2:1.5 cheese to pumpkin), add pumpkin pie seasoning and Truvia™. I pretty much eat it daily right now lol.

    Love this thread! I've added pumpkin to my gnocchi recipe to add fiber to it. My favorite recipes are pumpkin biscotti http://www.simplyrecipes.com/recipes/pumpkin_biscotti/ i usually make it and send half of them to various friends but this year I'm making fudge :)http://www.recipegirl.com/2008/08/28/pumpkin-fudge/ (here's hoping I can actually give them Away! )
