    My favorite pumpkin thing is actually pumpkin seeds. Roasted with a bit of salt, yum! I could eat those all day.

    I've made these with spice, chocolate, and vanilla cake. They are great. Just don't add any water. No one knows they have pumpkin in them.

    skinnytaste.com has a pumpkin section. Lots of yummy sounding ideas. There's a dip that uses pumpkin, low fat cream cheese, and greek yogurt that sounds great.

    Spicy pumpkin soup! :)

    1 large onion chopped
    3 Tbsp unsalted butter
    3 15 oz cans pumpkin
    6 cups chicken broth (I use my homemade stock so there is no added salt)
    1/4 tsp. cayanne pepper
    salt, pepper to taste

    Saute onion in butter, when soft add the pumpkin and the broth...use your own judgement on the broth you may need it all or not...depends on how thick you want your soup! Simmer about 30 minutes, stir in the cayanne pepper and then I always add a dash of salt and pepper...and enjoy...so simple and I love it! If you can spare the calories it's great with about a Tbsp of heavy cream or a dollop of sour cream mixed in. :)

    I got 7 2-cup servings from this - 145 calories per serving!!

    I hate that we do not have canned pumpkin here, I love it. Supermarkets don't even really stock pumpkin until October time :(

    I eat this delicious recipe called "pumkin fluff" It has a whole tub of fat free cool whip, a sugar free vanilla instant pudding packet and a can of pumkin. It is yummy. It tastes like pumpkin pudding. :)

    Pumpkin smoothie!

    1 Cup - Very Vanilla Silk Milk
    1 Cup - canned pumpkin
    3/4 C. Ice
    1 "serving" of Vanilla protein powder

    Throw this in a blender and you'll be a happy camper all day! Makes about 20 oz or a little over 2 10oz drinks. Enjoy!

    I looove pumpkin flavored things and this is all making me drool.

    I always make a pumpkin roll, but haven't quite figured out how to make that one less bad for me!
