As we near fall and with the return of the pumpkin spice lattes I am craving anything pumpkin. Put down some of your favorite recipes or ideas for using pumpkin.
My favorite is spice cake mix and a can of pumpkin, mix and bake as muffins. They are super moist and ooooooh so yummie.

I made the pumpkin protein pancakes posted earlier in this thread for breakfast this morning - OMG SO GOOD!!! i wanna have them everyday now! lol (except i'm now out of cottage cheese so need to get more!).
I had a thought - i thought the pancakes reminded me a lot of...uh...cake lol. so i was thinking you could probably make the pancake batter into little round molds, cook it, and then stack with a layer of sweet cream cheese filling in between to make like a pumpkin pie pancake layer cake! I'm gonna try that for Thanksgiving! thanks to the person who posted about the pancakes - they're my new fave breakfast! :bigsmile: :flowerforyou:0 -

Nutrition Facts:
Nutrition (without walnuts): 1 square = 47 calories, .7 g fat, 8 g carbs, 3.7 g protein
Nutrition (with walnuts): 1 square = 63 calories, 2.3 g fat, 8 g carbs, 4 g protein
Ingredients:
½ C Xylitol Brown Sugar Blend (Ideal)
1 - 4 oz. jar baby food applesauce
2 tsp. ground cinnamon
1 ½ tsp. ground ginger
½ tsp. ground clove
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
2 tsp. vanilla extract
4 large egg whites
1 - 15 oz. can of raw pumpkin
2 C oat flour
2 scoops vanilla whey protein
½ cup almond milk
½ C chopped walnuts (optional)
Directions:
Preheat the oven to 350.
Spray a 9 X 13 Pyrex dish with non-stick spray.
Combine first 11 ingredients and mix well.
Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated. Spread batter into the Pyrex dish and bake for 30 min.
Makes 24 squares.

there is a Pumpkin Cream cheese spread by giant eagle its 100 cal. for 2 tbs Its to die for its soo good and hits that sweet spot!
I have seen Pumpkin Cream Cheese sold at Sav-a-lot and Aldi's. Very yummy!0 -

imma try pumpkin pancakes!
gonna use the simple greek yogurt recipe I have for pancakes but use pumpkin instead !! should work the same!
6oz greek yogurt (so will try pumpkin!!)
2tbsp egg whites
1/2 cup flour (Reg or wheat , i use reg)
1tsp of baking powder
stir and make like pancakes!!
when doing em greek yog style i add banana or bluberries!
but for pumpkin i may add nana... or mini c chips!

1/2c pumpkin, 1 scoop of protein powder, couple of tbl of cool whip , pumpkin spice , splenda , 1c water and ice ..., make a milkshake ..its outa this world yummy0

OK, I'll be very bad and add this recipe:
Pumpkin Pie Martinis
1/2 cup brown sugar
2 teaspoons pumpkin pie spice - divided
1/2 cup water
2 tablespoons granulated sugar
2 cups half and half - I use fat-free
4 tablespoons pumpkin puree
1/2 teaspoon vanilla
1/2 cup vanilla vodka
In a small saucepan over medium heat, combine the brown sugar, 1 teaspoon of the pumpkin pie spice, and the water. Stir until the sugar has dissolved. Heat to boiling. Remove from heat and cool completely. This is the syrup.
On a shallow plate, mix together the granulated sugar and the remaining teaspoon of pumpkin pie spice.
On another shallow plate, pour out 2 tablespoons of the syrup. Rim your martini glasses by dipping them into the syrup, then into the sugar mixture on the other plate.
In a pitcher, combine the half and half, pumpkin puree, vanilla, and vodka. Stir briskly with a whisk. Add the remaining syrup and whisk it again.
Shake with ice and serve in the rimmed glasses.

High Protein, high fiber, low fat, pumpkin oatmeal bake. Can be made ahead for the week, or frozen. It is good warm or cold. Lots of options for substitutions or add-ins.

Two of my favorite things made into one delicious cookie!!!
Ingredients
3 cups of brown rice flour
2 eggs
1 tsp ground nutmeg
1 15 oz can pumpkin
¼ cup of peanut butter
Instructions
1.Preheat oven to 350 F mix all ingredients together until soft dough forms.
2.Divide dough in half, roll out on rice floured surface 1/2" thick.
3.cut out with your favorite doggie cookie cutter bake on ungreased cookie sheet for 30 minutes.0 -
And on the healthier side, this is like my main breakfast during the fall!!
Ingredients
6 cups water
3 cups canned pumpkin (or 3 cups ANY fruit, chopped or whole depending on what it is)
2 cups steel cut oats
1/2 cup unpacked brown sugar (or honey if you prefer, nutrition info will be diff if you use honey)
1-2 tsp ground cinnamon, to taste
1/2 tsp salt
1/4 tsp ground nutmeg (I only use if I'm making pumpkin or apple)
Instructions
1.Place everything in crockpot, stir well.
2.Cover and cook on low for 6-8 hrs, stir well before serving.
Makes approx. 8, 1 1/4 cup servings
Calories 213, Carbs 43, Fiber 8, Protein 7, Fat 3

I love mixing 1 cup of cottage cheese with a half cup of pumpkin. Then you add a little splenda and some cinnamon and nutmeg (or pumpkin pie spice if you have it) It tastes like the filling from a pumpkin Pie.
Also if anyone is trying to watch carbs you can use a box of sugar free yellow cake mix with one can of pumpkin and a little pumpkin pie spice for a different variation of the muffins as well :-)
