    Sweet Potato Burritos!

    4 sweet potatoes
    1 package of frozen corn
    2 cans of black beans, thoroughly rinsed
    2 jars of salsa
    4 oz of soft cream cheese

    Put on slow cooker on high for 6 hours. Delish, vegetarian, and kids love it! Any other vegetarian ideas?

    Last nite we had sweet potato beef stew
    roughly - i lb of stew meat - 3 cups of sweet potatoes ( we like BIG pieces - so I used more)
    1 large onion
    4-6 cloves of garlic ( we like garlic)
    beef broth ( about a cup)
    tomato paste
    cinnamon stick & a bay leaf

    brown the beef - toss everything into the crockpot on low 6 - 8 hours.... super tasty! we had it with kale on the side



    I made this in my crock pot last night - not only does it taste pretty good, but my apartment smelled AMAZING when I woke up today!


    2 1/2 cups peeled and cubed macintosh apple
    3 cups peeled and cubed sweet potato
    1 1/2 cups cleaned and cubed butternut squash
    1 tablespoon pumpkin pie spice

    2 cups low sodium vegetable broth
    1 teaspoon pumpkin pie spice
    1 tablespoon honey

    Preheat the oven to 400 degrees. Spread apple, sweet potato, and squash on a greased cookie sheet, then sprinkle with the pumpkin pie spice. Roast for 10-15 minutes.

    Transfer the roasted veggies to a crock pot and top with 2 cups of vegetable broth, a teaspoon of pumpkin pie spice, and a tablespoon of honey. Cook on low for 6 hours. Mash vegetables for last half hour of cooking, or use a blender after the soup has cooled to give it a smooth, creamy texture.

    4 servings, 165 calories each.

    This sounds amazing!

    I made this... it came out very, very sweet- almost like pumpkin pie filling. Since it doesn't appeal to me as a soup, I'm going to mix it with some oatmeal and see what happens. It yielded 6 one cup servings for me.

    Sweet and Sour Pork Chops

    4 boneless pork chops
    1 (20 ounce) pineapple chunks in juice
    1 sweet onion, chopped large pieces
    1 tablespoon lemon juice
    3 tablespoons cider vinegar
    3 tablespoons soy sauce
    1/4 cup brown sugar
    1/4 teaspoon ground ginger
    2 tablespoons cornstarch
    3 tablespoons cold water
    Directions:
    1Place pork chops in bottom of crock pot.
    2Mix all ingredients EXCEPT cornstarch and water -- also add juice from pineapple can. Pour mixture on top of chops.
    3Turn crock pot on high temperature for 1 hour. Cook on low for 5-6 hours.
    4During last 1 hour of crock pot time, mix cornstarch in cold water and stir into juices in crock pot. These chops are wonderful served with rice.

    Here is my beef stew recipe:

    Layer from bottom up -

    3-4 cubed white potatoes (I use Yukon Gold size B)
    1 lb trimmed beef stew meat
    baby carrots
    fresh sliced mushrooms
    1 can Contadina Burgundy & Olive Oil diced tomatoes with juice
    1 can beef broth mixed with 1 packet McCormicks reduced sodium beef gravy
    Kosher salt/fresh ground black pepper to taste

    Low 6-8 hours

    If I don't have the McCormicks mix on hand, I thicken with cornstarch at the end.

    1 jar salsa (I use a 650 ml jar, and read the label to make sure there is no sugar)
    1 C frozen corn
    1 tbsp cumin
    1 tbsp chili powder

    Put it all in teh crock pot and cook for 6-8 hours. You can eat as is or over brown rice. We make this a lot in my house!

  • I am so excited about all of these recipes!

    Here's mine! Takes a bit of explaining though.

    I get the three pack Free Range Chicken and use one of those.
    It is about 1 lb of chicken.
    Add 4 tablespoons of coconut oil.
    1 Purple/Red onion (cut as you prefer)
    Fill the crock pot the rest of the way with water
    Cook on Low for 10 hours
    Optional: Vegetables
    I normally add the vegetables in when reheating because I don't like mushy veggies.

    Perfect and fast for cold days and you can freeze it as well! I wait for it to cool then put it into Zip Lock bags and stick in the freezer.

    Ingredients

    5 apples, cored, peeled and sliced
    1 c. fresh cranberries, washed
    1 c. water
    1 cinnamon stick or 1 tsp. ground cinnamon
    sweetener of your choice to taste
    Directions

    Combine water, apples, cranberries and cinnamon in crock pot.
    Cook on high 4-5 hours until apples are soft. Discard cinnamon stick.
    Place the mixture into a food processor and process until smooth or pulse slowly and leave some fruit chunks and texture in the applesauce if you like it like that.
    Add your sweetener and chill.

    Ingredients:

    24 oz (1 1/2) lbs chicken breast
    14.4 oz can diced tomatoes with mild green chilies
    15 oz can black beans
    8 oz frozen corn
    1/4 cup chopped fresh cilantro
    14.4 oz can fat free chicken broth
    3 scallions, chopped
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp cumin
    1 tsp cayenne pepper (to taste)

    salt to taste

    Directions:

    Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice or in a tortilla (extra pts).

    Chicken Stroganoff

    4 Chicken breasts ( fresh or frozen)
    1 16 ounce Fat Free Sour Cream
    1 can of Fat Free Cream of Chicken soup
    1 Packet of Lipton's onion soup (have used generic)

    Place the chicken breast in the bottom of the crock pot. Mix the sour cream, cream of chicken soup and onion soup together until well blended. Next spread the cream mixture over the chicken in the crock pot. Add salt and pepper to taste. Cook for 4-6 hours on low. I usually serve on top of brown rice with broccoli on the side. It is one of my families favorites!

    {Easy but Delicious} Chicken Tacos

    4 large chicken breasts
    1 cup chicken stock
    1 can Rotel (or salsa)
    1 packet taco seasoning

    *Cook on high for 2 hours, low for 3. Shred chicken when tender.

    I skip the tortilla shell & opt for a bed of lettuce instead. Enjoy!
