THANK YOU EVERYONE for the previous recipes. Trying to be a better meal planner, so this is awesome!
As a previous poster suggested, I do something similar.
Bag of frozen chicken breasts (I used good ol Walmart-NOT precooked)
1 can of Rotel
1 package of taco seasoning.
Do NOT add additional liquid.
Threw it all together in the morning before work, came home and had dinner for our family AND company. Great for tacos/taco salad/ect. and 8yr old approved.
Thanks for the recipe. I might have to try this, but I think I will do it with the thawed chicken breasts.0 -

Slow Cooker Beef Stroganoff:
2-3 pounds stew meat (or a 3-pound chuck roast, cubed)
1 teaspoon salt
1/4 teaspoon black pepper
1 medium yellow onion
¼ teaspoon garlic salt
1 tablespoon Worcestershire sauce
1 ½ cups beef broth or stock
1 tablespoon ketchup
1/3 cup flour
6-7 tablespoons water
2 tbsp spicy brown mustard
1/2 cup light or regular sour cream
Place the stew meat, salt, pepper and onion in the slow cooker. Stir to distribute the seasonings and onion. In a small bowl, combine the garlic salt, Worcestershire sauce, beef broth and ketchup. Pour over the meat. Cook for 7-9 hours on low or 4-5 hours on high. About 30 minutes before serving, combine the flour, mustard, and water in a small bowl, whisking vigorously to combine well. The roux should be thick but still pourable so add a tablespoon of water at a time to thin, if needed. Pour the flour mixture into the slow cooker, whisking quickly to mix in the roux with the stew meat and juices and to avoid lumps. Cook on high for 30 minutes. Stir in ½ cup sour cream right before serving. Serve over pasta, rice or baked potatoes (I prefer no-yolk egg noodles!).
(Feel free to add mushrooms - the husband hates them, so I leave them out.)

These are some great recipes! I currently have a couple chicken breast with some BBQ sauce in my crock pot. You can shred it and make a BBQ chicken sandwhich or wrap with it. Super easy and delicious!0

Quick Tortellini Soup -
In crock pot, on low - combine:
1 carton chicken broth (32oz)
1 can diced tomatoes(28oz)
1 can northern white beans -drained/rinsed (15oz)
1/2 chopped onion
1 zucchini chopped/diced
1 tsp dry basil
when you get home - turn heat to high and -
throw in 1 container (butoni) tortellini (small pkg)
cook another 20 min until tortellini done

Slow Cooker Pulled Pork Barbeque
¼ Cup Sunflower or Canola Oil
2 Tablespoons Red Wine Vinegar
½ Cup Dark Brown Sugar
¼ Cup soy Sauce
1½ Cups Tomato Sauce (All Gold preferably)
1 Teaspoon Garlic Powder (I used those little Knorr garlic stock cubes)
1 Medium Onion, chopped
2 Tablespoons Worcester Sauce
900g Boneless Pork Shoulder (I used pork fillet, but I guess you can even make this with beef brisket or such)
Coat the inside of your slow cooker with cooking spray
Combine the oil, vinegar, brown sugar, soy sauce, tomato sauce, garlic powder, chopped onion and Worcester sauce in a large plastic bag.
Put the pork in the bag with the mixture, tossing to coat the entire piece.
Refrigerate for 6 – 8 hours (I did overnight) – turning the bag once.
Allow the bag to come to room temperature and pour the entire contents in your slow cooker.
Cover and cook on low for 10 hours, or until the pork is tender
Remove from the pot and shred with two forks.
Add back to the sauce, stir and serve directly from the warmed pot.

Swiss Chicken Casserole (Not really low cal, but suuuuuper yummy!)
4 boneless, skinless chicken breast
4 slices swiss cheese
2 cans Cream of Mushroom Soup
4-8 oz Sour Cream
1 Box Stovetop Stuffing Mix for Chicken
1/4 cup melted butter
Seasoning to taste (I use sea salt, black pepper, garlic and onion powder, and sage)
Coat crock pot with cookind spray. Season both sides of chicken to taste. Place in bottom of slow cooker. Place one slice of cheese on top of each chicken breast. In a bowl combine the soup and sour cream (Do not add water, you want this to be kinda thick. I add a little bit of garlic and onion powder to this mixture as well.) Pour evenly over top of cheese, smoothing out to make sure everything is covered. Pour dry stuffing mix evenly over top of soup mixture. Drizzle melted butter over dry stuffing mix. Cook on high 3-4 hours.0 -

Slow Cooker Apple Crisp
**This is by no means healthy but it is delish**
1 cup all-purpose flour
½ cup light brown sugar
About 1 cup white sugar, separated
1 tsp ground cinnamon, separated
¼ tsp ground nutmeg
1 pinch salt
½ cup butter (one stick), cut into pieces
1 cup chopped walnuts
1 tablespoon cornstarch
½ tsp ground ginger
6 cups apples cored, chopped (peeled if desired)
2 tablespoons lemon juice
1. Mix flour, brown sugar, ½ cup of white sugar, ½ teaspoon cinnamon, nutmeg, and salt together in a bowl. Combine butter in with the mixture using a fork or your fingers until coarse crumbs form. Stir in walnuts and set aside.
2. Whisk together 1/3 cup sugar, cornstarch, ginger, and ½ teaspoon cinnamon.
3. Place the apples in the bottom of the slow cooker, stir in the mixture from step 2 (cornstarch mixture); toss with lemon juice.
4. Sprinkle the walnut crumb topping (step 1 mixture) over the top.
5. Cover and cook on HIGH for 2 hours or LOW for 4 hours, until apples are tender. After cooking time is complete, uncover the slow cooker to allow the topping to harden for about an hour.0 -
Pulled chicken
3lb frozen chicken breast
1 bottle franks red hot
1 ranch dressing packet
Cook low all day 6-8 hours . Place chic ken breast on plate to pull apart the toss back into sauce in crock pot
Serve with lettus as lettuce wrap!!0 -

Easy Pot roast
roasting beef (about 1.5 lbs)
potatoes
carrots
a packet of french onion soup mix
about a cup of water and/or broth
put in crock-pot on low for 8 hrs
I like to use a small bag of baby red potatoes sliced in half and a bag of baby carrots. It is a little more soupy than stewy but i like to soak up the broth with the bread.0 -

I just made a variation of one I found on Pinterest.
Boneless pork chops (I made 4)
Chicken Broth (2 cups)
Spice (whatever you have or like)
Potatoes individually wrapped in foil, placed on top of pork chops, cover and I cooked on high for 6 hours.
Pork was so tender and the potatoes perfectly done!

Morrocan Chicken & Lentils
8 oz baby carrots
1 1/2 cups dry lentils
24oz boneless skinless chicken breasts
2 tbsp minced garlic
3/4 tsp salt
4 cups chicken broth
2 tsp Morrocan Rub
Throw everything in crock pot. Cook on low 8 to 10 hours. Shred chicken and enjoy!
Chicken Tortilla Soup
1 lb boneless skinless chicken
2 10 oz can enchilada sauce
1 can diced tomatoes
1 can diced tomatoes w/ green chilis
1 can drained black beans
1 bag frozen mixed stir fry veggies
1 bag frozen peppers & onions
3 minced cloves garlic
2 boxes chicken broth
2 tsp cumin
2 tsp chili powder
2 tsp salt
1/2 tsp black pepper
1 bay leaf
1 tbsp chopped cilantro
Throw everything in crock pot. Cook on low 8 to 10 hours. Shred chicken. Top with crushed baked tostitos and reduced fat mexican blend cheese. Enjoy!0
