    i do chicken breast with onions, peppers, celery, carrots and either light italian dressing or light bbq sauce and let it cook on low all day. my kids, me, my father in law even approved and was a healthy filling meal also made brown rice to go with

    THANK YOU EVERYONE for the previous recipes. Trying to be a better meal planner, so this is awesome!

    As a previous poster suggested, I do something similar.

    Bag of frozen chicken breasts (I used good ol Walmart-NOT precooked)
    1 can of Rotel
    1 package of taco seasoning.
    Do NOT add additional liquid.
    Threw it all together in the morning before work, came home and had dinner for our family AND company. Great for tacos/taco salad/ect. and 8yr old approved.

    4 sweet potatoes
    1 package of frozen corn
    2 cans of black beans, thoroughly rinsed
    2 jars of salsa
    4 oz of soft cream cheese

    Put on slow cooker on high for 6 hours. Delish, vegetarian, and kids love it! Any other vegetarian ideas?

    Yum! Do you just toss the sweet potatoes in whole or mash them up?

    Nice thread!

    Here's a super easy "Chicago Italian Beef" that my Midwestern family and I have been throwing together for years:

    - big hunk of beef... you could use chuck roast, London broil, basically anything thick!
    - one green pepper
    - one onion (white, yellow, or sweet)
    - basil, oregano, salt, and pepper

    Directions:

    - Brown the beef in oil
    - Simmer in crock pot with enough water to cover the meat for 6 hours
    - Add sliced green peppers and sliced onions (a whole or halves, depending on your taste)
    - Add a dash of dried basil,oregano, salt, and pepper
    - Simmer for another hour and a half to two hours

    It's done when the meat shreds apart easily and the veggies are soft!

    Throw on a bun and you're done!

    - Or - Just eat as is!

    I do a really simple crockpot ribs:

    (I'm only cooking for two; change as needed)

    1 package of beef boneless short ribs
    1/2 c Splenda brown sugar
    1-2 t garlic powder
    1-2 t onion powder
    season salt
    1 onion
    1/2 c Sweet Baby Ray's bbq sauce
    1/2 c Kraft light bbq sauce
    splash of Bud Light Select 55

    I put in my crockpot liner (always first!). Combine brown sugar, garlic and onion powder (other spices as you like). Slice my onion into rings. Put a layer on the bottom. Use season salt of choice on ribs. And then use my combined spices as a rub on the ribs. Place them in the crockpot, put remaining onions on top. Pour in BBQ sauce. Add the select 55 (beer on hand I guess) and a little water. Cook on low for 7 hours. Yummmm!

    Need more specifics...Do you cut up the sweet potatoes or leave them whole?, peeled or leave skin on?, what size package of corn?, 15oz cans of black beans?, what size jars of salsa? Why are they called burritos?

    Yes, I am serious.

    Bumping means it will save this forum under "My Topics" so you can find it again later.

    My 11 year-old tells me it means "bump up my post." When I first saw it, I thought it was in reference to a fist bump like if you liked what someone said! LOL!

    One can of Rotel is enough? Did you put it on taco shells or something?
