Last night's dinner - Grilled tofu, corn, roasted beets, squash and some fresh tomatoes
Today's lunch post-workout - Olive hummus, homemade kimchi, a toasted pita, with kale salad and chopped cukes, sliced tomatoes and fresh basil leaves (and my garmin and 2 bottles of water in the background :blushing:)

couscous mixed with meatless ground, laughing cow wedge and yeast falkes topped with shredded zucchini (sauteed with garlic oregano and black pepper), marinara sauce and ricotta cheese. not shown: everything mixed together = yum

lemon thyme chicken I roasted one night for dinner! this wa sbefore roasting, and I served it with roasted veggies, a salad and some mash
and i loveee onions in my stir fry. this one has baby carrots, swiss brown mushrooms, sweet corn kernals and some spiral pastas!
one of those dinner night outs! we planned a dessery after dinner, so I went light with a garden salad with dressing on side, and added grilled chicken breast

green curry tofu with red and green peppers, white and red onion and broccoli. had it with leftover couscous the next day for lunch, for dinner though ate it by itself. made 4 servings, under 200 per serving.

One of my many house warming gifts... A 6 qt enamel coated dutch oven made of cast iron. Made the bombest bowl of chili today, with 6 cups of beans cooked from dry, ground chicken, loads of veg, and bulgur wheat. Added adobo and tons of spices to kick up the flavour and oven roasted at 275F for 3 hours for a good thick consistency.

Kicked it Asian style with egg noodles + shrimp salad tonight. It was a room temp dish with onions, carrots, some cabbage, peas, and lots of yummy Asian flavourings (soy, ginger, rice wine, garlic, sesame). Tasty delicious.
