Made the tuna salad today with mashed avocado instead of mayo - shown here with toasted mini wholemeal pitas. I also added lemon juice, tomato, cilantro, celery, green onions, salt, black pepper, and tabasco. It was all going great until I opened the can of cheap tuna fish I decided to try. I had the distinct feeling I was eating cat food in some survivalist bootcamp, and even checked the can twice. Next time, tuna steaks in water!

banana rum pancakes made with steel cut oats. some of the best pancakes i've ever made. hard to believe that something made with steel cut oats, whole wheat flour, and flax meal could be so fluffy (yet very hearty and filling).
These look delicious! Is there anything else needed to make these other than the oats, flour and flax?0 -

Tonight's supper was 2 flounder fillets coated with a cheddar jack and bacon crust, with some rosemary/garlic fried potatoes and onions -- I use my NuWave to fry so only used less than a tablespoon of EVOO -- and of course a sprinkling of Sriracha Sauce which I put on almost everything !!!! Total cal count is 575. DELISH !!!!

Ricotta slim pasta...had some mad cravings last night and managed to whip this up for under 300 cals.
Vanilla Banana protein Pancakes, 400cals 40gram of protein
1 Large banana
1 egg
1 full scoop vanilla protein
1 teaspoon almond meal
1/2 teaspoon vanilla ess
1/2 teaspoon baking powder
Came out pretty darn good if you ask me

rotisserie chicken, rotini pesto salad with zucchini & cherry tomatoes, corn on the cob

Kale & spinach with shredded heirloom carrots, red onion, cherry tomatoes, chicken, and feta. I tossed the carrots & onion with lemon juice and the lettuce with a bit of red wine vinegar and squeezed the rest of the lemon half all over the whole salad.0 -
