This was yesterday's breakfast -- apple, blueberry, and blackberry oatmeal (plus long black and water).

Here's a fairly recent one. Stuffed chops and golden potatoes cooked in the smoker for a couple hours at low heat and served with steamed brussels sprouts.

Greek restaurant's vegetable plate! Steamed vegetables with spanakorizo, potatoes, & slice of meatless pastitsio.
Steamed broccoli and corn, cherry tomatoes. Food from the dining hall, brought to the comfort of my dorm room. This was my dinner because I felt guilty about the day before.
When dining hall was closed: I bought some organic baby spinach and a gala apple! I squeezed lemon on top.
When dining hall was closed: shared this with two other friends -- Ina Garten's recipe for macaroni and cheese, made with gruyere and Minnesota cheddar. Delicious. I love cooking!0 -

Peanut butter chocolate layer cake:
Tofu eggs with veggie ground, some tomatoes, bell&jalapeno peppers, and spring onions. Flavoured with turmeric, coriander, lemon, rosemary, bay leaves, celery seed, basil, cayenne pepper, orange peel, oregano, thyme, cumin, black pepper, and garlic:
Buckwheat pumpkin muffins topped with sunflower seeds:
Chickpea pancakes with hummus, guacamole, grilled peppers and ****ake mushrooms, olive tomato bruschetta, fresh dill, and sprouts (in the pancake: chickpea flour, black pepper, garlic powder, spring onions, jalapeño peppers, curry powder, cumin, turmeric, and garam masala):
Carrot cake made with buckwheat and almond flours, flax, raisins, dried cranberries, dried apricots, and ample lemon zest! Topped with lemon glaze (and a pic of my dog side eyeing me for not sharing):

Roasted Butternut Squash & Sweet Potato on Baby Leaf Spinach, Topped with 1tbsp of Organic Natural Yogurt and 10g of Applewood Smoked Cheddar.

It is healthy depending on the individual goals set by those who add their meals to this thread religiously. Healthy is meeting your macros, micros and caloric goals, harbinger on any medical considerations you may have. You need to define and determine what is healthy FOR YOU. Other forumites cannot make that determination FOR YOU.

copped out and made lemon vanilla cake the other day, tasted amazing and wasn't unhealthy at all! minimal butter/oil used, and mostly consisted of four eggs beaten till fluffy.
very weird combination of healthy and unhealthy for lunch the other day. had oats cooked with skim milk, healthy as. and then i threw in deep fried dough sticks, which are well known for being greasy and full of empty calories... oh well. i have a serious weakness for them anyway. xD

i made some pumpkin pecan ice cream. i'm not much of a peter peter, but several people in my family are (and they are ice cream fiends as well), so i made it for thanksgiving.

spaghetti squash marinara bake (layer marinara, spaghetti squash, sauteed mushrooms, garlic, broccoli, spinach, ricotta, mozzarella, parmesan - layer again and top with marinara and mozzarella, bake at 350 until cheese melts)
not meals, but desserts i made for thanksgiving dinner at my job tomorrow with our residents. i am lazy though and i also am doing a frozen sweet potato pie and frozen apple pie. i don't like baking THAT much, cooking is way better
