Last night's dinner -- paella mix over couscous and veggies, side of corn. Everything was delicious except for the seafood, which was truly horrible. Blecccccchhhh. We threw most of it out; my son had deli turkey and salad instead and I settled for using the extra calories on booze.0 -

One of my favorite things to make (and eat) a jibarito de bistec which is a sandwich made of fried green plantains sliced length wise in half and then flattened as the "bread" and a filling of thinly sliced steak slow cooked in a marinade of onions, garlic, vinegar, olive oil, sofrito, a touch of salt, and tomato sauce till tender and full of flavor..cheddar cheese (or American), lettuce, tomato, and a thin layer of ketchumayo (which is ketchup, mayo, garlic, and hot sauce all mixed together) spread on each plantain half.
