    Last night's roasted chicken thighs & root vegetables in pesto cream sauce. I'm trying this whole new thing where I eat food and don't freak out about it, it's going swimmingly so far.

    Holy eff me, that looks delicious! I thought at first it was hollandaise sauce!

    Dinner on the weekend was beer can chicken with fries and gravy. SOOOOOOO good.

    Dinner last night was so random - sunny side up eggs with ham, salsa and rice. Trying to fit those macros/finish them leftovers.

    Snow day from work! Carrot fritters with Greek yogurt. Plus an apple and some cheese. Yum.

    This was very much a matter of "hmm what's in my fridge" since I didn't have a chance to go food shopping before the storm hit!! I mixed 180g carrots (chopped in food processor), 1 egg, about 15g flour, 1 clove garlic, and some salt/pepper/parsley/smoked paprika. I cooked them in a little butter for about 4 minutes each side. The topping is just plain Greek yogurt, a bit of lemon juice, and salt/pepper/parsley/garlic powder. The whole thing took about 15 minutes from start to finish and was totally delicious!

    Ribeye and mixed grilled vegetables. Don't worry, didn't get to enjoy but a 1/4 of the steak before I reached my calorie goal.
