Spaghetti, smoked cashew and kale pesto, cured egg yolk

    IMG_20150527_191859.jpg

that looks amazing! do you make the pesto yourself? would love to give it a go!

    I did indeed

Smoke raw cashews (I used Applewood chips)
Remove stem from a bunch of kale
Blend together kale, cashews, a few garlic cloves, handful of grated parm and drizzle olive oil until it achieves desired consistency

For the egg yolk, mix equal parts kosher salt and white sugar together. Form a little divot and place egg yolk in there and completely cover with salt and sugar mixture. Put in fridge for about a month. Remove yolk, gently wash off salt/sugar, dry, grate like parm.

Thanks! I'm definitely going to give it a go, sounds amazing :)

A big ol' cheeseburger. We went to Nation's Giant Hamburgers today. My first time there. So good. Then we stopped at the park on the way home and walked some of it off. Then we stopped at the frozen yogurt shop and had a scoop of gelato! Call it a lost weekend. :#

We are on a two week trip in our camper through Colorado, Wyoming, and now Spearfish, South Dakota. Have had some less than memorable meals (hot dogs and pretzels) but tonight was a good one:

Thick cut strip steak which I cut in half before grilling, baked potato, asparagus, and a nice bottle of Italian wine.

It was :) can report, @Kruggeri that our beloved Malbec pairs fantastically with spicy chocolate!

@mathandcats The recipe was approximately the following--I'd go heavier on the spices next time, though:

    1. Preheat oven to 350 F. In a food processor, mix the following until smooth:
    2 very ripe bananas
    1/2 ripe avocado
    1/4 cup white sugar
    1/4 cup brown sugar
    1 tsp vanilla extract
    2 eggs (or equivalent substitute)

    2. In a separate bowl, sift together the dry ingredients:
    1 cup all purpose flour
4 heaping tablespoons Dutch process cocoa powder (I used Hershey's "special dark")
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon
    1 tsp cardamom
    1/4 tsp cayenne

    3. Add the dry ingredients to the food processor and combine until smooth. Should be approximately the consistency of (thick) brownie batter.

    4. Stream in 1/2 to 1 cup milk (I used almond milk) to achieve cake batter consistently. Optional at this point: stir in 1 cup chocolate chips or bits (I used some gifted specialty chopped cayenne chocolate pieces). Pour into prepared baking dish and bake at 350 F for 35-45 min or until toothpick inserted in center comes out clean.

Skipping frosting/icing means it's "healthy," right?

Just realised I definitely needed some more colour in this meal! Vegetarian roast, bean and cauliflower mash, mushroom gravy and turnip fries (that didn't crisp up as much as I'd hoped).
