Online menu is not really up to date. I had a broccoli fritti with vinegar and honey dipping sauce followed by spaghetti with clams and mussels. Shared side of sauteed spinach.

Second meal from last night's whole roast spatchcock chicken was a horribly inauthentic taco dinner. My Mexican sister in law would cringe if she witnessed this.
Main filler was a salad of chopped leftover chicken, a chopped avocado and a jar of commercial salsa. Garnishes were crumbled feta, lime wedges, coriander, shredded lettuce, raw onion, creme fraiche, green sriracha. Hubby struggles to digest tortillas but can handle thinner peking duck wrappers so we used those. The elote was reasonably authentic except for the fact I used Japanese mayo and parmesan cheese and roasted the corn in the air fryer.

More chicken laksa. Finally used up the last of Sunday's roast chicken, though this time we needed to stretch it with some ready made fried tofu puffs.

Take a can of sardines in water (I prefer the ones in water if I mam going to make this so I can control my own fat).
Empty it and mash up with a fork.
Fine dice equal amount onion, bell pepper, avocado (for me its about 1/8 cup each) and add to the mashed up sardines.
Now add in ketchup and hot sauce. Mash everything up again, mix and stir. Adjust seasoning as you like it. I like it when I can taste the sweetness of ketchup and heat from the sauce. Amazing on freshly toasted bread.

Yes...this most likely would be so delicious!
