    I recently made delicious curried lentils that came in pretty close to 300 with brown rice. Even with a dollop of low-fat yogurt, it's not calorie busting! I used vegetable broth, but you could use chicken. Added in some tinned tomatoes, diced onions, sweet potatoes, curry powder, cumin, tumeric, sriracha, and a little bit of garam masala. Seriously, Indian and other asian cuisines are so flavorful, relatively-simple to prepare, but pack so much nutrition!

    Macaroni Frittata

    Serves 4 (1 slice)

    INGREDIENTS
    4 eggs (or 2 eggs and 4 egg whites)
    1 tablespoon cornstarch
    1 tablespoon capers, drained
    6 pitted black olives, sliced
    1 tablespoon chopped fresh parsley
    1 teaspoon butter
    1/2 cup chopped onion
    3/4 cup chopped red bell pepper
    1 1/2 cups cooked macaroni (or other small pasta)
    2 medium tomatoes, seeded and chopped
    2 tablespoons chopped fresh basil

    PREPARATION
    Preheat broiler. In medium bowl, beat eggs and cornstarch. Stir in capers, olives, and parsley; set aside. In a 10" ovenproof nonstick skillet, heat butter over medium heat. Add onion and pepper; sauté until softened. Add macaroni; season with salt and pepper. Stir together until heated. Remove from heat. Pour egg mixture evenly over mixture in skillet. Reduce heat to low; cover and cook 5 to 7 minutes. Remove cover; place skillet under broiler for 2 to 3 minutes (until top is slightly browned). Cut into wedges, top with tomatoes and basil. Serve immediately.

    Check out the blackened shrimp taco recipe I posted. If you cut out the black beans you're right around 300 calories and it takes minutes to prepare

    This is slightly more, but is a great recipe. If you bake the tofu, tossed in a little bit of olive oil it has the same effect as frying it. So, tasty. It is tangy and spicy, and one of my favorite vietnamese dishes.


    tomato tofu
    • 4-5 large tomatoes, not too ripe.
    • 2 lbs tofu
    • 2 small yellow onion
    • 1 Tbs minced garlic (dehydrated garlic minced garlic)
    • 2 tsp salt
    • 1 tsp sugar
    • 1 tsp rice vinegar (more than this)
    • 2 tbsp tomato sauce hunts
    • 3 cups water
    • fresh cilantro to taste
    • red pepper to taste
    • oil (I like ¼ tsp)
    Directions:
    fry the tofu first, until golden and still soft.
    chop the garlic, onion, and tomato very fine. put some oil in a big pan(about 1/8 cup). sauté the garlic for a few minutes, then add the onion. cook until it's soft but still white. add the tomatoes. when the mixture comes to a boil add the tofu and all the spices except the cilantro. simmer for 1 1/2 hours. add cilantro 10 minutes before serving.

    tonight I had cod loin (lightly dusted in cornflour with salt and pepper) fried in a little olive oil( or you could bake in the oven)

    with tomatoes on the vine roasted in the oven for 10 mins

    on a bed of pea and water cress puree

    (cook the frozen peas for 10 mins - add water cress for 1 min

    drain and then puree with a little veg stock )

    average size portion is about 280 calories.

    Calories depend on portion size but quick meal I just made

    Take a chicken breast and filet it
    Stuff it with laughing cow flavored cheese (whole portion is 35 cal or you can divide it in half-I did and it was fine)
    Spray Pam or olive oil on cookie sheet
    Sprinkle seasoning mix on top of chicken (Tuscany, sicillian blend, whatever you like just think about how it will pair with the cheese you selected)
    Spray a bit of olive oil on top (so seasonings do not burn)
    Bake in oven at 350 for 20-25 min
    Around 120-140 calories (depends on size of chicken and if you use all of the cheese wedge)

    Add you favorite veggie as a side -some are lower cal than others

    Depending on cal count you might be able to have a small portion of whole grain rice or a dinner roll (schwans has herb and cheese biscuits that are amazing and about 100 cal)
