I do this thing I call mexican eggs.

    Requires:
    1.5 oz turkey kilbosa
85 grams of obrien potato's frozen or fresh
    Taco seasoning
    4 egg whites
    2 tablespoons salsa

Start by cooking the potatoes for about 4 minutes in a non-stick skillet
add Kilbosa cook for another 2 minutes
Add taco seasoning, you can even add at the beginning if you like
Once all stirred up add eggs and cook to desired consistency.
Put the salsa on top, and eat.

This is about 280 calories, if you want to add a little more you can put some cheese on it to. I like the weighwatchers mexican blend. Adds about 80 calories per ounce.

Sweet potato homefries with zucchini, kale, onion and peppers. Cooked like home fries in a litle peanut oil.

^Wow I have to try this!

Most mornings I have scrambled eggs, bacon and toast with jam.

    Home-made breakfast burritos:

    Bacon
    Scrambled eggs
    Cheddar cheese
    Lots 'o Salsa

Wrap in a "fajita" sized tortilla - BAM. I make enough for the whole week on Sunday and keep them in the freezer.

Well I do a large breakfast since it's best to have the bulk of your calories early. I usually have 1 cup oatmeal with 1/4 cup raisins and 1/4 cup almonds and a glass of milk or I have 2 cups cherios with 1 cup vanilla almond milk and 1/4 cup cottage cheese with a half cup of canteloupe... ether way whole grain, protein, fruit and dairy ^_^

This morning I scrambled 1 egg and 1 egg white, put it over 2 warm corn tortillas with 1/4 cup shredded cheese and 1/4 of an avocado with some hot sauce. Super yum and under 400 cals!

I generally have 2 or 3 eggs scrambled in TBSP of butter or I make a 1-carb egg pancake recipe with sugar-free maple syrup.

If I'm in a hurry, I just take a leftover pancake and roll it around a slab of butter and eat it on the run.

I fry a pound of bacon on Sunday and keep it in the fridge. If I'm in a hurry I can grab a slice of that too. My favorite is Applegate Farms Dry Cured Thick Sliced.

I was eating 2 slices of wholemeal toast with a little strawberry jam, but as of tomorrow, I'm trying Belvita breakfast biscuits with natural yoghurt & banana (or maybe mixed berries).
