    I make 2 loaves of banana bread that normally call for 6 ripe bananas but instead use 3 and for the rest I use pumpkin. It's really moist so it's hard to judge when it's done baking but oh is it good!

    Vegan pumpkin chili! I'm also dying to make a pumpkin pie as well as my apple pie this weekend. Want to see if I can make it healthier or something, I figure anything is better from scratch than frozen since I will not be adding a bunch of crap!

    Super Moist Low Fat chocolate cupcakes

    18.25 oz duncan hines dark chocolate fudge cake mix
    1.4 oz sugar free, fat free, instant chocolate pudding
    1 cup canned pumpkin (not pumpkin pie filling)
    1 1/3 cups water

    Preheat oven to 350
    Line a cupcake tin with cupcake liners
    Combine pumkin puree and water in a large bowl, mix to combine. Add chocolate pudding mix and mix well
    Add chocolate cake mix and beat 2 minutes

    Fill cupcake liners 2/3 full and bake about 25-28 minutes

    Makes 24 cupcakes

    As far as pumpkin spice lattes go I've found that a decent subsititute is Starbucks blonde roast, one pump pumpkin spice, one pump sugar free cinnamon dolce, and a splash of milk (I use half and half because of the carb count, but obviously skim will keep calories lower). My version this morning logged as 74 calories, 6 carbs, 3 fat, 5 sugar.

    OK, I'll be very bad and add this recipe:


    Pumpkin Pie Martinis

    1/2 cup brown sugar
    2 teaspoons pumpkin pie spice - divided
    1/2 cup water
    2 tablespoons granulated sugar
    2 cups half and half - I use fat-free
    4 tablespoons pumpkin puree
    1/2 teaspoon vanilla
    1/2 cup vanilla vodka

    In a small saucepan over medium heat, combine the brown sugar, 1 teaspoon of the pumpkin pie spice, and the water. Stir until the sugar has dissolved. Heat to boiling. Remove from heat and cool completely. This is the syrup.

    On a shallow plate, mix together the granulated sugar and the remaining teaspoon of pumpkin pie spice.

    On another shallow plate, pour out 2 tablespoons of the syrup. Rim your martini glasses by dipping them into the syrup, then into the sugar mixture on the other plate.

    In a pitcher, combine the half and half, pumpkin puree, vanilla, and vodka. Stir briskly with a whisk. Add the remaining syrup and whisk it again.

    Shake with ice and serve in the rimmed glasses.

    i make pumpkin pie french toast for my kids like every 2nd wknd. its just eggs, milk, vanilla, pumpkin and pumpkin pie spice. its delicious! use old tyme no sugar added syrup, its not terrible for ur diet either, lol. LOVE IT!
