I made this in my crock pot last night - not only does it taste pretty good, but my apartment smelled AMAZING when I woke up today!
2 1/2 cups peeled and cubed macintosh apple
3 cups peeled and cubed sweet potato
1 1/2 cups cleaned and cubed butternut squash
1 tablespoon pumpkin pie spice
2 cups low sodium vegetable broth
1 teaspoon pumpkin pie spice
1 tablespoon honey
Preheat the oven to 400 degrees. Spread apple, sweet potato, and squash on a greased cookie sheet, then sprinkle with the pumpkin pie spice. Roast for 10-15 minutes.
Transfer the roasted veggies to a crock pot and top with 2 cups of vegetable broth, a teaspoon of pumpkin pie spice, and a tablespoon of honey. Cook on low for 6 hours. Mash vegetables for last half hour of cooking, or use a blender after the soup has cooled to give it a smooth, creamy texture.
4 servings, 165 calories each.

Really good italian beef recipe, not the healthiest but it's delicious:
3 pounds sirloin tip roast
1 12oz bottle of whatever beer you like
1 jar sliced peppercini peppers
1 pkt dry italian good seasoning dressing
on bottom of crock pot mix half beer with some seasoning and some peppercinis with some juice. Place beef on top, pour rest of beer over it, sprinke seasoning (reserve 1/2 tsp) and more peppercinis with juice on top. Cook for 8-10 hrs on low. Shred beef (take off fat too) and then stir it back in crock pot with the rest of seasoning. Cook for only half an hour more. I wouldn't use all the peppercinis unless you like it extremely hot, I use a little less than half a jar because I'm the only one in my family that can stand a lot of spice! You can adjust the seasoning and peppers however you want too.0 -

BUMPAND THANKS FOR THE RECIPIES.
I made a great dressing for spinach by blending 1cup fresh strawberries, 1 TBS of balsamic, 1tsp of stevia (sugar), 1/4 tsp sea salt, 1/4 tsp at least of freshly ground pepper, blend up in bullet or whatever and add 2TBS of almond oil or sesame oil, mix again and done. Its delicious on spinach and I store the rest in Refridgerator. Also good on meat or veggies.0 -

Ingredients:
2.5 lb pork shoulder blade roast, lean, all fat removed (I used Smithfield)
6 cloves garlic, cut into sliver
cumin
dry adobo seasoning (I used Goya)
garlic powder
3/4 cup 99% fat free chicken broth
2-3 chipotle peppers in adobo sauce (to taste)
2 bay leaves
Directions:
Season pork with salt and pepper. In a medium sauté pan on medium-high heat, brown pork on all sides for about 10 minutes. Remove from heat and allow to cool.
Using a sharp knife, insert blade into pork, cutting small holes and insert garlic slivers. Season pork generously with cumin, adobo and garlic powder all over.
Pour chicken broth in the crockpot, add bay leaves and chipotle peppers. Place pork in crock pot and cover. Cook low for 8 hours. After 8 hours, shred pork using two forks and combine well with the juices that accumalated at the bottom. Remove bay leaves and adjust salt and cumin (you will probably need to add more). Let it cook another 15-30 minutes.0 -

14.4 oz can diced tomatoes with mild green chilies
15 oz can black beans
8 oz frozen corn
1/4 cup chopped fresh cilantro
14.4 oz can fat free chicken broth
3 scallions, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp cayenne pepper (to taste)
salt to taste
Directions:
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice or in a tortilla (extra pts).0 -
So glad I found this thread. I work during the dinner hours so Crockpots are a life saver for me. I love being able to get dinner prepped and outta the way early in the day. Plus my family is always on the go so it makes it easier for everyone to grab a bite to eat when it fits in to their schedule. The recipes I posted above I found at skinnytaste.com. She has a ton of great recipes... the two I posted I tried and everyone loved it.0

10 (2 lbs) skinless boneless chicken thighs, fat trimmed
1 small onion, diced
1 garlic clove, crushed
1 bell pepper, chopped or sliced
4 plum tomatoes
2 tbsp alcaparrado or pitted spanish olives
8 oz can tomato sauce
1/4 tsp oregano
1/4 tsp cumin
salt to taste
1-2 bay leaf
1/4 cup chopped cilantro (plus 2 tbsp more for serving)
Directions:
Place chicken, onion, garlic, pepper and tomatoes in the crock pot. Season with salt, cumin and oregano. Mix well so everything is seasoned.
Add tomato sauce, alcaparrado (or olives) along with 1 tbsp of the brine, 1/2 cup water, bay leaf and cilantro. Mix well and set crock pot to HIGH 4 hours or LOW for 6 hours. When done, taste for salt and seasoning and adjust spices as needed. Add 2 tbsp chopped fresh cilantro and serve over rice.
*Serve over 3/4 cup white or brown cooked rice for a satisfying 9 points plus meal.0 -

Recipe 1:
1 lb chicken
1 can and cream of chicken soup
1 6 oz package of stuffing mix
1 and 1/4 cup of water
2-3 large potatoes cut up
1 large can of green beans
Put chicken in the crock pot
Top of soup
top with potatoes
combine water and stuffing mix and pour over potatoes
Top that with the green beans
cook on low for 6-8 hours
Recipe 2
2-3 lb pork loin
1 can of cranberry sauce
1/2 cup of orange juice
Put all in crock pot and cook on low for 6-8 hours.0 -
