    Shouldn't these be called banana fritters or something? I think a pancake has to have some kind of cake ingredients, no?

    Does this work well if you simply use a hand blender (I have an Oster) to mix the eggs and banana while mashing the banana? It seems like it should, but has anyone actually tried it this way?

    I dont see why it wouldnt - I just use a fork to mash and whisk it the old fashioned way since I dont have a blender or mixer and that works well enough :-)
